I found hazelnut butter at the health food store and use a spoonful in my smoothies as a stand in for hazelnut milk. It works well in a normal blender if you don't have a Vitamix. You can do this with any kind of nut butter, but hazelnut is oh so good, especially with chocolate, coffee, or carob. MMMMM

Brendark- thank you! Sweet potatoes are one of my favorites. Anything you snack on that is already made and ready to eat an hour later? Just grab and go? Carbs, but fruit doesn't sit well with me. I'm leaning toward a Paleo muffin that I can take with me. I have never made any. I tend to stay away from foods that mimic non-Paleo foods. :) But it's portable, ready to go and won't perhaps will sit well on the run.

Luv-2-Run - I haven't found a store that sells hazelnut milk, actually.
The milk I made, there is a recipe for it in the vitamix cookbook that came with my blender, I'm sure it can be adapted to other blenders, you just have to make sure that you have cheesecloth or a nut milk bag (I don't know how much these cost, but no matter the price, they're definitely worth it!).
Ingredients; 3 cups water 1 cup nuts (any nut or seed for that matter would work, make sure to soak them for 8+ hours before hand) Sweetner to taste (stevia works best)
Alternate ingredients; Vanilla Hazelnut Milk: 1/2 tsp of vanilla Chocolate Hazelnut Milk: 1/2 tsp vanilla, cocoa powder to taste (I put about 2 tbsp)
Vitamix instructions: Place all ingredients in vitamix in the order listed set variable speed to one and secure lid flip vitamix on and quickly turn the variable speed to 10 flip on high and mix for 30 seconds strain through nut milk bag and enjoy
I don't know how this would work in other blenders, I hope this works for you.
When I'm in need of extra carbs and don't want to use fruit, I will mix some melted dark chocolate with stevia and pour it over coconut ice cream (though I guess coconut is a fruit...)

I am allergic to hazelnuts, but I do love nuts. Walnuts are my favorite. I have 1/4 cup every morning for my breakfast along with some lean chicken breast and a fruit. They are so yummy! I also love cashews even more, but have a problem overeating them. It is easy to overeat nuts. I am glad that you found a tasty drink that you love! Good job!
