Thanks guys... I will have to go shopping get some almonds, nut butters and some organic apples. I just bought some pumpkin seeds and will toast some today, so for snacks this should give me more calories as well. emoticon

I agree with these responses. No problem putting away healthy calories when you eat fats. I keep a jar of blanched (soaked and peeled) and dehydrated almonds on the counter. Eating a handful of those with a meal will hike up the calories and the nutrition. I love apple slices dipped into nut butter that I have blended with coconut milk and even a tsp of coconut oil. Or apple slices dipped into guacamole. I love Brie on a seed cracker with a glass of wine. Now there's some instant calories for ya!

I can stand next to my strawberry patch and quickly consume too many berry calories!

My meals look pretty similar to CIndy's except for snacks. For snacks, I will have some type of nut butter & apple slices or primal custard. I also make Primal bites from nuts, dried fruit and coconut oil. I think the key is to add more fat if you are in need of more calories.

I never have an issue being under, but over! My typical day is something like this:

B-Eggs, either hard-boiled or an egg casserole with sausage, kale and onions; V8, piece of fruit.

L-Dinner leftovers or veggies with tuna salad and a piece of fruit.

Snack-when I am home, a handful of almonds, a few pieces of lunch meat, a piece of fruit. At work, a small portion of whatever meat and veggie they are having (at a group home).

Dinner-a generous portion of meat (ie, 2 pork chops, a very large chicken breast, 2 salmon filets), a cooked veggie with ghee or oil, fruit for dessert.

Now where I make up my calories if I am short, and go over, is the late night almonds, dark chocolate or wine. I know they are not strictly paleo but I do indulge on occasion. I think I would be over without truthfully.

Has anyone had a problem reaching 1000 calories a day?... if not, could you give me an sample menu of what you eat so that I can add on to my calories... I need more calories on the days that I workout.
