Steak with beet and parsnip chips. The parsnip chips were the best, crisp and sweet with the same crunch as a potato chip- YUM!

Maybe Mark's Daily Apple is where i got het idea that someone would find paleo boring?

Dinner, pork scaloppini style (meat very thin); saute garlic in butter, add pork, squeeze lemon, add a small bit of heavy cream, add some arrowroot flour to thicken (jsut like cornstartch, just don't let it boil) Yummy!

Today hubby and I made eggplant parmesan, but with whole milk mozzarella. We topped it with a "sauce" of tomatoes, peppers, onion, and ground beef, and a side dish of spaghetti squash. It was supposed to be sauteed, but hubby used waaaaay too much olive oil and it ended up more like fried. But at least that gives me an idea for another side dish!

All these foods sound so tasty! And I totally agree, how could one be bored if they have even the slightest bit of creativity!

We had pork ribs, but the bonelss kind. Cut off most of the fat. DH brushed them with a littel grillling sauce, probably not paleo, and I threw together some BBQ sauce, which was paleo. After we had pomegranate, one fruit split between 6 people.

Yesterday I had a bowl of tomatoes and okra with chicken breast. Okra was my new veggie for the week, and I'd say it went over pretty well!

Today, leftover stuffed pumpkin with organic sausage and some grapes for dessert.

Tonight, it will be Beef Burgandy. (Is wine Paleo?) I'll probably serve tofu shirataki noodles with it, which wouldn't be Paleo; but at least they're not wheat, and they're low-carb. We'll also have coleslaw made with coconut oil and Bragg's apple cider vinegar. I'll also grill some peppers and green onions.

Today breakfast is two paleo muffins: zucchini, almond flour, egg, and blueberries.

Lunch: Those Rachel Ray fritters that Jac-Attack mentioned, only I made mine with dried unsweetened coconut and fried them in coconut oil. They're tasty, but not very solid... topped them with mixed fruit and some lime juice

Dinner: a bowl of cheater-style bouillabaise (made with veggie broth) and frozen mashed strawberries for dessert.

Oh, and midday snack is leftover paleo pancakes topped with homemade cashew-walnut butter.

As far as I know, pork rinds are paleo. I've seen a couple recipes that use crushed pork rinds as a substitute for bread crumbs when making "fried chicken." I'm tempted to try it.

Tonight, I went out with my boss and our guest artists to a local restaurant. I had a big salad with greens, avocado, olives, tomato, cucumber, bell pepper, mushrooms, carrots, sunflower seeds, and a piece of grilled salmon. It came with croutons, but I didn't eat them, and I topped it wish a red pepper vinaigrette. Not sure how paleo the dressing was, but I didn't eat too much of it (not a big dressing fan to begin with). I also did not eat any of the pizza appetizer they ordered or the bread. Drank water.

Mmmm, green curry shrimp sounds delish!!!

I had a yummy porkchop on Satruday, of course I won't be able to make it myself. It was grilled and topped with an artichoke gorganzola sauce. Of course cheese isn't 100% paleo, but I don't follow that part all the time.

I had Mexican for lunch yesterday. Jalapeno poppers, they were so good, and GRILLED, so no breading...I would love to have some more right now.

Oh, the other day we went to the diner, I had an omelet with prosciutto, mozzarella cheese, roasted red peppers, and onion. It was so GOOD. DH even had to take two extra tastes. I asked them to not give me potatoes because I have an affinity to them. So she replaced them with mixed veggies, fresh broccoli cauliflower and carrots. Man, my mouth is watering just thinking about it.

Today I did some intermittent fasting, so my whole day isn't much to speak of. My dinner was a baked chicken drumstick with tomato-lime marinade and chili made with grass-fed ground beef, peppers, onions, and tomatoes. I had a small serving of sorbet that I made with strawberries, almond milk, and some mint for dessert.

Yesterday for breakfast I had two mini-fritattas filled with bacon, peppers, and onions, and lunch was curried chicken salad wrapped in romaine lettuce. Yummy!

breakfast: two scrambled eggs with hot sauce, a small handful of walnuts
lunch: mix of baby spinach and romaine, one of those grocery store sushi meals, minus the rice (salmon, tuna, shrimp), baby carrots and veggie cream cheese
dinner: crusted chicken tenderloin, green pepper, cauliflower

snack1: almonds
snack2: grapes, cottage cheese
snack3: string cheese

Today was a little cheese heavy, I don't normally eat that much. I need to get more veggies/fruits tomorrow

There is another thread here discussing the possibility that a paleo diet is boring- maybe if we shared what we eat each day it might encourage some members to explore new foods and recipes.
To start here is today for me:
Breakfast- scrambled egg, applesauce and blueberries with a scoop of plain yogurt and some flax meal
Lunch- romaine/tomato/mushroom salad with olive oil and lemon juice; side of canned salmon; baby carrots with a spinach dip
Dinner- pork chop, coleslaw, apple/onion garnish, serving of boiled yam
Snack- toasted unsalted almonds, apple
