I actually did this. I was working full-time, and wanted to finish my degree. My employer wouldn't help at all, so I enrolled with the University of Phoenix, transferred all prior credits and then finished up in just over two years.
I will admit that at times it was brutal. People who think that online education is easier are wrong! However, it WAS easier because I did not have to drive to class, sit away from home listening to lectures, or carry heavy textbooks with me wherever I went. It was tough in that the participation is mandatory and University of Phoenix crams a 15 week semester into 5 week classes. Adult learners have a different set of learning skills than youngsters straight out of high school, and kicking the pace up means you finish sooner!
I heartily recommend it to anyone who wants to finish an associate or bachelor degree, or even go for a graduate degree. Send me SparkMail if you are thinking about it and I will tell you about my experience!
At age 48 I now have a bachelor degree hanging on my wall in a really nice frame because I worked my tush off and earned it. And I can go get the master's degree I want because I did the early work!!
Go for it...

"There has never been a better time to take college classes and acquire a degree online. Gone are the stressful days of not only trying to get to class on time, but having to sit through a long, drawn-out lecture on material that you're probably already familiar with. Taking classes online requires a lot of discipline, so if you're not serious about buckling down and completing your assignments, you'd better consider taking traditional classes or forego college altogether."
