I found this online :) Directions for Mung Bean Tea:

Place 1 cup of mung beans in a medium saucepan and cover with 1 inch of water. Soak for 20 minutes. Bring to a boil, then reduce to low heat, cover and simmer for 20 minutes. Strain, cool and serve. The tea can be flavored with honey.


There may be a way to use the leftover beans in another recipe

My daughter and I just started the Eat Clean Diet. My daughter read the book and I'm working on reading it. We're not exactly clear on the "Mung Bean Tea". I washed the beans and put them in the 5 cups of water, simmered them for an hour, and let it cool a bit before I drank it. I understand the beans absorbed much of the water because that's what beans do but should I have drained the beans before I let it cool? Do we eat the beans as part of a meal or dispose of them? We would appreciate and information as the book wasn't very clear....
