Meal 1- No Bake Energy Bar (raw honey, PB2, almond butter, oats, vanilla protein powder, raisins, and slivered almonds). Quite tasty!

Meal 2- Plain chobani greek yogurt with raw honey, oats, and raisins

Meal 3- Frittata (chicken, spinach, quinoa, and powdered egg whites)

Meal 4- Banana with almond butter, raw honey, and unsweetened cocoa dip

Meal 5- Strawberries and a hard boiled egg

Meal 6- Goya pink beans and quinoa

I'm choosing a new salad, a new entree and a new soup for each week for the month of June. Recipes from the Eat Clean cookbooks and magazines. My goal is to have a soup in the fridge each week, for easy meals and lunches.

Breakfast was 3 egg whites and 1/2 a grapefruit. Lunch is Tomato, zucchini and meatball soup and apples. Dinner is grilled chicken and asparagus. Snack tonight is a strawberry smootie made from strawberries and ice! YUM!!

I like to use clean recipes from Oxygen magazine but also from Tosca Reno's book on clean eating. I also use vegetarian cook books for clean ideas. I just need to get more fish in my diet. I will be filling the fridge and freezer with fish and low fat meat this week-end as well as in yummy fruit and veggies.

I found a great clean recipe on Spark this week for Mushroom Barley soup. I used an organic veggie broth instead of Chicken and it was amazing! Only 196 calories per very filling serving

I made spicy 3 bean soup with fresh tomatoes, garlic and sweet onions. Yum! The extra I measure out in portions and freeze for later. A great go to meal when I am tired. hugs, deb

I made from Tosca's Stripped book the Go Bananas Chocolate Tofu Pudding!!!! YUM!!!!!! Problem is that it says it is 4 servings.....heck, I say one serving it's so yummy so watch out! But, I can't figure out how to track it. Any ideas?

I made out of Stripped book the Weekend Wonder Stripped Leek Soup. It was easy and not bad. I desperately wanted to add salt. It was a little bland but knowing it was clean and healthy and going to help me lose weight made me not add salt.....but I really wanted to. emoticon I've also tried tempeh this week (didn't like), quinoa, and something else new....can't remember......check out my blog. Talked all about embracing new foods in the name of clean eating!

Cooked Quinoa
Chopped cucumbers
Chopped radishes
Chopped green onions
Chopped bell pepers
Chopped tomatoes
Lemon Juice
Olive Oil
Chopped fresh mint leaves
Chopped fresh parsley
Salt, pepper, and cumin to taste

SO DELICIOUS AND FILLING!

Tonight my son helped me make Greek Fish Florentine from the January issue. It was exellent and he even ate a whole portion. My husband loved it as well. Last nights Thai Chili was fabulous too.

So, FYI, I added dried blueberries to the everyday bran muffin, and it's delicious. YUMMY.

Today, I think I'm going to make a double batch of turkey chili. Unfortunately fresh is out on some items, but will use low sodium when I can to get the healthiest version I can.

The swiss chard was good (although I like spinach and kale more).

Tonight's dinner is fish ... I'll be looking for a new recipe for orange roughy ... I have the tendency to make things the same over and over .... lol

I'm going to be baking a half batch of the Everday Bran muffins from Tosca's cookbook. I'll be adding some blueberry for change of pace.
