I made "Cream of Broccoli Soup this evening - YUM!
It's out of a Muscle and fitness Hers magazine I had lying around (about 3-6 months old):
Serves 6 1 T Olive Oil 1 small onion, chopped 2 cloves garlic, minced 4 cups vegetable brother 3.5 cups chopped broccoli florets 1 med. russet potatio, peeled and diced into 1/2 inch cubes 1.5 t salt 1/4 t nutmeg 1/2 c plain protein powder.
1. in a large souop pot, heat olive oil over medium heat. Add onion and cook about 5 min or until soft. add garlic and cook an additional minute. 2. add vegetable broth, broccoli, potato, salt and nutmeg. broing to a boil; reduce heat, cover and simmer 10-15 min. or until veggies are tender. 3. Transfer half the soup mixture to a blender and add protein powder. Puree and pour into a serving bowl. repead with remaining soup and stir both batches together.
(per serving) 150 cal 17 g protein, 14 g carbs, 3 g fat, 2 g fiber, 4 g sugar, 410 mg sodium
I didn't have veg. broth, but chicken (not low sodium, either), and only had vanilla protein. Nonetheless, I really enjoy it and I'll be making this one again.
