I ended up finding it at Whole Foods, so I'm excited to try the recipe soon. If we like it, I suppose I can always buy the vital wheat gluten online and have it shipped. Or else, stock-up whenever I travel (which is what I end up doing for some of our other exotic items). Yay!

"Vital wheat flour" is also sold as "vital wheat gluten" or just "gluten". We are able to get it in the bulk section of our local grocery store, in the bins by the flour. Otherwise, check for a Bob's Red Mill display, as they often have it bagged.
Good luck with your seitan! I use the recipe from Bittman's *How to Cook Everything Vegetarian,* and it's good enough that DH will actually slice the stuff, sauce it, and eat it on sandwiches. Our favorite use, though is seitan "wings". Yummy.

Does anyone make their own seitan? I found a recipe that doesn't seem too complicated, but I was wondering what kind of store carries vital wheat flour? Is this something I should be able to find at Whole Foods or Trader Joe's, or somewhere more obscure? I'm traveling next week and will have access to these stores, but I'm not sure where too look. Any feedback is appreciated. Thx!
