My favorite tofu's are:
Morninu - it has very smooth texture and doesn't have the aftertaste of soy. It is also lower calorie, so you may have to use more to get the same amount of protein. It's great in smoothies and desserts and "cream" based soups.
Azumaya - for dishes required to saute/marinade/bake/fry tofu. It holds together nicely.
