Today we started our meatless mondays officially. It was delicious and more filling than I'd expected. I did run into the problem of not getting as much protein as I'd have liked. Next time I'll have a smoothie with protein powder for breakfast to get started off right.
What are your tricks for meeting your protein goals on meatless days?

It had 10 g protein in one cup's worth, which is pretty decent but not what my goal was. I ended up eating 1.5 cups and just going with that, but it did put me over my carb goal (and being diabetic that's not great) I tested my blood sugar after and it was in a good range tho, so I guess it was all good! Anyway... what are your favorite filling and protein full vegan or vegetarian meals?
Do you do meatless mondays? I've been adding more and more vegetables to my meal plans, so I figured it's a good healthy step for me.
