This is for if you like beans and rice - 1 can of Progresso Lentil Soup, 1/2 bag of frozen spinach, cooked rice - heat the soup and spinach together, serve over the hot cooked rice, sprinkle with a bit of parmesan cheese. Add a salad on the side. This is so delicious! It's a little high in sodium, but otherwise fairly good for you. ---DBABYBELLY

Costco stuffed Salmon, 270 calories per 4 oz portion! Summer salad drizzled with lemon juice & canola oil. Brown rice.

MariaSparkle, do you have other items you traditionally serve with your lentil curry? Is your recipe on Spark People at http://recipes.sparkpeople.com or here on the Flexitarians Team Forum under the Healthy Recipes subcategory?


Nikkinoodle, I like your meal suggestion. A nice complement of flavors and textures. Getting the seasonal veggies at the Farmers Market would provide the variety to keep me from getting bored.

I have not made it to the Farmers Market yet. It is only on Wednesday from 3-7. I will try harder next Wednesday to schedule it into my day. This week I added some veggie plants to my flower bed: cucumber, tomato, red bell pepper.


1. half an avocado spread on two slices of Ezekiel sesame bread with a little salt and pepper on top

2. a side of raw vegetables from the farmers market; such as sliced tomato and cucumber

I don't know if you would consider this a meal or not but one of my favorite lunches is half an avocado spread on two slices of Ezekiel sesame bread with a little salt and pepper on top. I eat that a few times a week with a side of raw vegetables, whatever I have available from the farmers market at the time. This week it has been sliced tomato and cucumber.

I really like my chickpeas made into hummus, especially with red peppers. I haven't met a chickpea that I haven't liked. I also like black beans and cannelini beans and all lentils!

I love chickpeas too and use them in salads often. They're also good just to snack on. Have you ever tried draining them, putting them on a bread pan, sprinkling a little garlic salt or taco seasoning on them, then bake for about 20 minutes in a 350 degree oven? They come out crunchy and the seasoning gives them a little bit of a bite to them. You could also put parmesan cheese on them and bake as above. Really good.

My take on Simply-Vicki meal. I could maybe use this to create a different meal with the same components.

---Seafood - spices is main flavor
---Baked potato - soft texture and flavor
---Cole Slaw - crunch texture, spike of dressing flavor
---Key Lime Pie - cool, creamy, sweet with tart from citrus

I am just now discovering the chickpeas. You encouraged me to look up some SP recipes. I used "chickpeas" as the search word and clicked the Advanced Option to limit it to "Dietary: Vegetarian". There is a nice variety of flavors and spices.

Usually when we go to our favorite restaurant it's for seafood. We usually get the seafood combo with baked potato and cole slaw, and key lime pie for dessert. But that's only for special occassions.

The reason I enjoy a menu plan more than a recipe book is a good chef will balance the textures and flavors of each item to complement each other.
