First you have to decide what your goal is with a flexitarian diet. Do you want to cut back on the amount of meat you eat, eat only fish, eat small portions of unprocessed meat, or some mix. Every one has different goals and reasons.
I started by only eating one serving of meat at a time and no red meat. I just slowly started replacing meat with other things. Now I try to only eat two servings of meat a week and mostly fish. For each meal I just use the meal closest to what I am having and change out components to make it work.
I've found without question that the best way to lead others to a more plant-based diet is by example - to lead with your fork, not your mouth. ~Bernie Wilke
