I have a black bean sweet potato chili recipe posted. I cooked it for a long time over the stove like it is listed. But one day I didn't have enough time to make a batch in the evening, so I just dumped everything into the crockpot before I left for work, let it cook for 8 hours. My crockpot will go to warm when finished. When I got home, it was very good. I only do crockpot in the winter. I will definitely cook it this way more often. It was a huge time saver!
I recently shared one of my go-to vegetarian crockpot recipes on SparkRecipes here: recipes.sparkpeople.com/recipe-detai l. asp?recipe=880551 It's a filling lentil curry that my family mysteriously loves, in spite of 'not liking' both lentils and curry. Weird. I'll often serve this over quinoa with a big dollop of greek yogourt for extra protein.
This is basically what I made the other day, but I also added garlic, cumin, chili powder, and oregano. I was following a recipe that called for pork, but I left the pork out. It's actually really good, but as I'm still warming up to beans, the beans were not really the star of the show. I had them with tons of lettuce, tomatoes, cilantro, and a some fat free sour cream on a whole wheat tortilla. It was really quite awesome :)
