I love brown rice, black beans, tomatoes, onions, and garlic. I usually add some hot sauce for zest. This is fast and easy.
Excellent - Thanks everyone and keep them coming too. I actually went to the store today and stocked up on meatless options for my home. I then came home and made myself Tofu for the first time - I was very impressed. I made a burrito/enchilada w/ tofu, veggies, black beans and put it on a wheat tortilla! It was incredible. With liking Tofu I now have a lot less fear! LOL
Olive oil, garlic, cumin, canned beans, tortillas
Go to quick dinner - bean burritos.
Quinoa! great protein
Try new and varied beans
Hummus or the stuff to make your own
try some dark greens
