Our day went ok yesterday. Stayed within my calories but not the sodium. Had a little too much. But today will be better.

Went on a great bike ride with my friend the other day (she is really sore!) and then had a baked potato at Wendy's with broccoli, cheese, sour cream and some bacon. YUMMO! Dinner was chips, salsa, bean and cheese dip and spinach and cheese dip. Not the healthiest, but we were with my parents and we don't get that often. Better tomorrow. :)

Sorry to hear about your husband. Insurance companies can be a pain. Since my husband works, I try to handle all the finances and calls. Sometimes they give me a hard time with passwords and the like. It's ridiculous. I know all his info, but they want to talk to him.

I haven't been eating the best lately, and not measuring like I used to. I do try to choose wisely, but when you feel bad, it's hard. Hopefully the weather and some exercise will help.

Boy, I can understand your stress level has to be sky high. I'm sorry to hear about the 2 women's cancer issues. I hope they'll get the treatments they need and will recover from it.
Maybe it's time for your husband to change jobs if that's possible. No one needs to be in a situation that causes them such stress that it makes him physically ill. And I hope you'll get over the migraines. I know they aren't any fun.

Hubby is having a difficult time with his breathing. I want to call the doctor in the morning but he wants to wait til after Wednesday morning and we've gotten our first of the month bills taken care of. He's afraid he's about to land in the hospital and he wants the bills covered as there's one place he has to go to. They won't let me get the money since it's in his name. They know I do all the bill pay but it's still their policy. But after Wednesday morning I'm afraid he may be heading to the hospital unless he improves a good bit between now and then. Please keep him in your thoughts and prayers.

It is hard to keep up with it all. I usually respond when someone else responds so when there aren't any responses I don't do anything on a site for a long time. Sad I guess. I just don't have time to get on each site and look it up.

My stress lately has been sky high. Two moms of friends of my daughter have cancer. One in her lung and the other in her breast and lymph nodes. The lung has had a node removed and she is recovering, the other will start chemo tomorrow and has 6 kids. Both families are awesome and I am close to both ladies.

My husband's job is also very bad for him and causing him extreme stress to the point of physical ailments. My migraines have gone nuts this month and the doc doubled my meds. They are making me very tired and out of it.

I tried a food challenge with my friend and it was fun. I would like to go back to some of the avoidance foods we got away from for those 21 days. We will try to get in some more exercise this week, too.

We've been under a severe weather/ tornado warning for the last 2 hours, with winds up to 100 mph. Thankfully the tornado warning has lifted now and the severe weather is mostly over with, but it's still raining pretty good right now.

Hi - first post here.
Plan for the day - egg sandwich for breakfast, lentil/sweet potatoe/veggie curry for lunch and dinner out with a girlfriend at a local farm-to-table place.
Got a 45 m inute walking workout in this morning. If it's not still too cold (or snowing later) will head outside for a brisk walk around the campus at work.

Sunday was the last day of a 21 day challenge with my best friend. We weren't supposed to eat fast food, chocolate, chips, candy, cookies, cake, donuts, muffins, rolls, pastries, biscuits. It was hard, but we made it. I slipped on the first day not even thinking my cereal had chocolate in it on the flakes and then on another day at a GS cookie booth when someone gave me some Funyon type snacks. I was there all day and it was almost lunch time so I was really hungry. When I realized it, I stopped. My friend did far worse. She ate a whole sleeve of Oreos once. I tried to be healthy for the most part. She did sacrifice when I was around and I heard that she made good choices for dinner and served her family other items. We think it helped out.

I ate some stuff on the list last night and ugh!!! I will be cutting some of it out for sure.

Good Morning All !!!
Today is my first day with your team so this is my first Daily Check In...
I figure I should get a plan on what I need to cut out of my diet, make a menu and then Follow It !!!
I am Diabetic, so Carbs are my biggest concern. And replacing animal protein with plant protein is a new thing for me.
Where to Start ?
I've always said that Knowledge is Power, so I better start doing a lot of reading.
How did you start ?
Any tips for me?

I noticed there are no team goals.

I tend to have a fiber snack in the evenings. Usually frosted mini wheat cereal. One serving and I'm regular as clock work.

Welcome Back!

I have popcorn or hot tea for a late night snack. Sometimes grapes. I used to have warm milk, but I think it does something to me and makes me sleep restless. I have very weird and/or vivid dreams afterwards!

I just got some free items for having a Pampered Chef party and am looking forward to using them. I loved using my garlic press for the 1st time. I remember my mom having one when I was younger. Wow. I have a brownie pan that can be used for other things, too. I got a microwave chip maker with a slicer and a cool thing called The Everyday Pan like the Rockcrock. I'm planning on using that tomorrow.

I've been super lazy cooking lately, but I started finally getting back some motivation. Then, this week hit with parent-teacher conferences, Halloween parties and dinner out for my anniversary and I've barely cooked all week. So today I'm scanning my Pinterest boards trying to make a meal plan for this week. I'm also still adjusting to cooking a little more meat for my husband while convincing him to eat a little less meat than he's used to. I'm still waiting for our weather to cool off to be able to cook soups and/or run my oven. We're still in the 90s :/

Great, thanks for the info. I love my fibrous veggies, so I will be making dips, soups and smoothies that will include them a lot. Mmmm, avocado.

This morning I made a cream cheese pumpkin dip in my food processor and it wasn't too bad, but it would be nice if it were to get creamier.

I plan to make some soups this week. One is an Olive Garden one, Toscana Soup. It has kale, potatoes, sausage, evaporated skim milk, and chicken broth. It's sooo good. I found one on FB for a chicken and dumplings recipe.

Today I am making something with noodles, brown mushrooms, zucchini and possibly chicken. I used to make a Creamy Garlic Chicken recipe where it was layered with a shredded cheese, heavy cream, fresh garlic and Parmesan mix between layers of thinly sliced chicken, zucchini and baby portabella mushrooms. It was so awesome served with brown rice. I'm looking forward to cooking this week.

Very true, the Vita-Mix does it all even avocado pits should you choose. LOL I have both. I use the Ninja (the small one) for smaller projects, hummus, tapenade etc. I've had my Vita-Mix for a long time so didn't have a problem treating myself, recently, to the Ninja.

I love my Ninja. I have the next to the newest version and two older versions. Sorry it got bad reviews. For those that can't afford the vitamix I think it would be a great option.

I was researching the Ninja blender the other day because Kohls had it on sale and I got the 30% off sticker. Well, it turns out that the Vitamix is soo much better. I want to be able to put potatoes in with skins, asparagus and onions and make a smooth soup. Several reviews said the Ninja didn't do well with fiberous foods and also not with hot stuff. The vitamix spins so fast it makes hot soup!! Downside....it costs about $500!!!!! So, I'll be working at the school as often as I can. :)

I get in a pumpkin kick this time of year. The funny thing about it....I can't stand pumpkin pie!! I like to make my own pumpkin cream cheese. I use it on these awesome bagels from Aldi that have 4 fiber and 9 protein!!! I put some greek yogurt in it this time around. My 9 yr old daughter is sharing it with me.

We had waffles for dinner tonight and I mixed in some splenda syrup with pumpkin cream cheese and the sprinkled with walnuts...YUM!

I brought my soy light milk to Bingo and mixed in some Splenda and pumpkin spice (homemade) good, but a little gritty.

I hope all are doing well!

That is funny. emoticon I was craving spinach yesterday but the hospital didn't have any and they didn't have broccoli, so baked potato it was again. I'm at home today so I will have more choices about my meals. I'm still craving spinach but I have some squash that need to be used. I won a spiralizer a while back so I may make squash strings and a nice fresh tomato sauce and call it good.

The walk ended up not being too bad. The road was dry enough I didn't sink but still a little slushy so just walked and no running. I waited too long to eat yesterday so I ended up eating some pork for lunch. It was handy and my soup was taking too long to make. I did end up eating the soup for dinner. Today should be an easy day to go meatless.

Walking in the mud doesn't sound like a lot of fun. My husband and I walked for 45 minutes today. It was nice. I had a burrito bowl with pork today, so I plan on being meatless tomorrow.

I make vegetable pizza at least once a week. I use the Mama Mia 7 inch pizza crust, coat with omega 3 oil, seasoned no salt tomato sauce and select vegetables (usually whats in the fridge. Mushrooms, spinach, eggplant or broccoli. Then I cover lightly with Go Veggie dairy free cheese shreds and bake at 350 deg C for about 18-22 minutes.

Half a pie is ~ 240 calories with toppings. Add a salad - its a light evening meal.

I need to get more produce in mine.

Today I had lunch with a friend. Thai. I had drunken noodles with veggies and tofu, yum. I only eat half and then eat the rest for dinner. It's sooooo good.

Tomorrow we may have cheese pizza and broccoli. Sounds weird, but it needs to be eaten. hehe

Went produce shopping today, so dinner is a bit of an extravaganza. I can never decide what to eat first! Dinner was a big mesclun salad with golden tomatoes and red/orange/yellow bell peppers, broiled salmon and portobellos, and my kids are about to polish of what's left of a whole honey dew melon. I seriously can't keep produce in this house, and its just me and two little kids!

When I'm really avoiding meat (like now), I find the only way I ever get enough protein is by having a serving or two of Greek yogurt and/or cottage cheese every day. I can't let it run out or I'm lost! I find I just can't eat enough beans/lentils/nuts to make up the difference.

Of course, my husband will be home soon and he'll be wanting meat more often than once or twice a month (!), so we will be re-adjusting our habits yet again.

I took my kids to Houlihan's for lunch and had the soup and salad. I had bacon bits on both but that's it. I had bean dip for dinner. This is mostly how I ate before, very little meat. Fruit, yogurt, cheese and crackers, veggies and found it so easy to skip meat. However, I am at the end of the day and still need 17 protein to just hit the bottom of my goal!!! Ooops!

Ok, so I have this amazing book from years ago when I was a nerdy H.S. or college student and got it from one of those mail order things. It's called "Foods that Harm, Foods that Heal". Anyway, I looked up Iron for you. Bean sprouts are good. They listed mung, chick peas, green lentils, alfalfa and soy beans as all being sprouting beans. Brussel Sprouts (yuck), but I have heard several say if you roast them the right way, they are amazing. Broccoli, too. Kale is a good one. You can make soups with that. I made that soup from Olive Garden with the kale and it was awesome. If you are cutting down on meat that could be a meat meal. If you are not eating meat, you can use a sausage substitute, but I think it does have a little cream in the soup, but you could make whatever soup you wanted.

Fruits with iron: Figs and apricots

I hope this helps.

I made a dish this weekend for the kids that was a meat patty, but with lots of veggies in it. It's called Buchum. It was shredded zuccini,, yellow squash, onions and carrots and then I add seasonings like salt, pepper and garlic and finally some eggs and flower. You make little patties and cook in the skillet until golden. We eat with Korean Kimchee or soy sauce. I guess you could leave out the meat or use a meat substitute and try it that way.

I roasted some veggies the other night and my husband thought they were awesome. I did too. My son hated them. I need to find ways to get veggies into my son. I have some cookbooks that show how to sneak veggies in, I'm going to use those. Plus, I'll just have him keep trying different veggies. He's good about trying new things.

I've been super lazy planning meals lately, and we haven't really tried anything new in a while. Tonight I'm cooking Kamut for the first time. My plan is just to use the basic cooking instructions on the package (I've already soaked it overnight) and then to combine it with some lentils and other veg I have on hand. I think have some mushrooms/broth in the freezer that would be a good add. Anyone have experience with Kamut? Hopefully it's not so bad I have to throw it out and order pizza...

Chick Fil A this week is offering a free entree for breakfast and also this month they do Bingo on Tuesdays at one location and Wednesday morning at the other location. Sooooo, my friend and I are going to both locations this week for free breakfast and to win prizes at bingo. This morning I won a Chick Fil A coffee travel mug. Other times I have won food cards (you always get to pick. A lady got a nice travel bag, canvas type. During the summer, my son chose a coffee mug (for milk, of course). They have books, hats, coolies, keychain flashlights, they had shirts one time, pens, those bags you reuse for groceries and a few more I can't recall.

Fun hour or so.

Thanks, the antibiotic is helping. I took it easy with my daughter home today, too. If she hadn't been home today with me, I honestly probably would have overdone it. I had plans of vacuuming and I shouldn't have. The two loads of laundry and cleaning the counters along with the short shopping trip was enough to ware me out.

Breakfast bingo the next two days should help. :)

Well, I found some almond milk with protein added. I got the original not the unsweetened. Honestly, it tastes like watered down slightly sweet skim milk. I'm not too fond of it. I looked at the nutrition on the unsweetened and the potassium was a lot lower than the silk I was drinking. Pros and cons of everything. So, frustrating.

Meanwhile, I am on an antibiotic for some sort of infection in my chest. Sleeping is awful. Coughing causes pains in my side. I'm so worn out. On day 3 of antibiotics. Hopefully I'll feel better soon.

my vegan friend just told me she gets almond milk fortified with protein. I wonder how much. The Silk has 6-8g. The Almond Milk I've seen only has 1-3g.

I have concerns with soy as well, particularly processed soy. I have PCOS, so avoid it because of that, but my husband and kids avoid as well. I will occasionally have edamame, but fake meat and soy cheese is out. We haven't had it in a couple years.

I had some friends recently mention higher risk of breast cancer from eating more soy. Do any of you guys have concerns?

I substitute unsweetened soy milk in all my baking and for breafast.
Soy milk adds fiber that dairy milk doesn't have. Soy products are
easier on digestion, especially for upset stomach. I also use soy
milk when making pumpkin or squash pie, the custard is much firmer!

I have tried almond milk but noticed it separates from liquid when left
standing. Whole foods had a sale this week and I decided to try to
Flax Milk...more later

This morning I had my cinnamon burst Cheerios, soy milk and fiber powder, but ran out of my dried apricots. I didn't think much of it, well, Just eating 245 cal. for breakfast hit me later...I was starving at 9am!! I guess I really need those extra 100 cal.. Headed to the store after lunch!

I think I will make some peach cobbler for dessert tonight!! We have a lot of extra peaches from peach picking. YUM

Hummus and cucumbers with pita chips and veggie dip for lunch and blueberries!

I haven't posted in here in a while, but thought I'd check in today. I've been doing really well keeping the meat in our diet to a minimum. Once a week or so for me, maybe two-three for my kids. I haven't been planning all that well, so dinner often consist of a few healthy things on a plate rather than a well-organized feast, but my kids don't seem to mind.

I started a new workout regimen, Focus T25, and was concerned that my nutrition wasn't going to be adequate, but I've been feeling okay and not under-fueled. I would have expected to have lost more weight by now (only one pound in four weeks!), but I will be patient.

Now I'm off to "farmers day" at my local produce store and oriental market. Hooray for Thursday!

I'm going to go get some more soy light today and try it for the week. It wasn't too bad. Low carbs, much lower sugars and 30 less calories. Pricey! I looked at the Almond Milk and it didn't have much protein at all.
