Something that isn't Mystery-Meat Balls in Some Kind of Sweet Goop in a Crockpot, or A Cold Box of Chicken from the Supermarket on the Way to Work.

I definitely like it when people include their ingredient list along with their offering. I'm not allergic to anything, but it shows some respect for people who are watching out for various things.

Mac salad hold the mayo!

I agree with all of these. Less dishes with meat in them certainly. (My fiance and I went to a potluck recently, and he got the job of making a potato salad. He insisted on putting bacon into it. I was so angry with him, but he refused to leave it out. Why does potato salad need bacon?)

I personally love a fruit tray and a veggie tray, hummus for dip, whole wheat breads, pita and crackers to go with it. Three bean salad is a great for summer potlucks! Salads that consist of more than iceberg lettuce, and have the dressing on the side. A variety of unsalted nuts for finger foods...

Thinking of veggie friendly main dishes, a good vegetarian crockpot red beans and (brown) rice would be lovely. Actually, I just wish people would bring more legume dishes. It's my preferred protein source, but people are so scared of beans!

I always bring salads - not typical chopped salad, usually something with baby greens, apples or oranges, nuts, goat or feta cheese - something people don't eat every day, then end up really liking. So sick of crock pot meatballs and macncheese, haha!

More hot dishes made with lentils. Or whole grain items (like whole wheat tortillas for a Mexican themed potluck) instead of processed carbs.

Fruit and veggie trays are great. It would also be wonderful if all the dishes did not have meat in them, like if pasta salad without the cut-up salami that's often in it..

More fruit, and plain salads. Not plain as in only lettuce, but plain as in not smothered in sauce. I get it that sometimes catalina dressing is the best for this particular combination of salad ingredients, but let ME decide how much I want.
We had a soup and salad picnic today at work and I am happy to report that there was a BUNCH of fruit. I'm hoping the church potluck this weekend follows suit....

Tabouli, made with Bulgar wheat or quinoa is always a favorite of mine. I also grilled veggies with Lemon Tahini dressing.

Fruit trays, definitely! I can't eat pineapple due to allergies, but man, i used to LOVE it when people brought fruit salad that had fresh pineapple in it.
