Tonight I am having sauted shrimp with quinoa and roasted asparagus. It takes 25 for the asparagus to roast and everything else takes less than that. Yum. I can't wait.

I keep a batch of pizza dough on hand for instant calzones, refrigerated it in portions, it stays fresh for many days. I add veggies and meat or temp-eh, daiya -which is a low calorie low fat alternative to cheese- and tomato sauce. Quick and easy!

Celery with light cream cheese spread on it topped with a sprinkle of paprika is one of my favorite snacks.

Just remembered a second great recipe. Better than the first: Lazy man scramble eggs, add 1 can drained mixed vegetables, and heat again and lastly add cheese slices as you tear them into small pieces. High protein, vitamin and calcium and delicious!!!

I don't know if I am to add my recipe by typing new discussion or if that will put me in a different category and not in add a recipe. This is not a dinner but it was sure loved by all three of us as part of dinner:
Pea and Carrot Salad
2 cans peas, drained
1 can carrots, drained
Add enough Miracle Whip or mayo to coat-but don't drown.
Simple but my 2 kids and I would fight over it and sometimes I'd have to make a second batch.

The Picante sauce is ok but you need some meat on there! Maybe canned chicken breast.

My favorite is a Kidney bean salad. 1 can Kidney Beans, 1 Can Rotel diced tomatoes, 1 green onion, 1 stalk celery finely chop the onion and celery, mix together with 1/4 cup mayonnaise.

Great quick low-calorie snack:

4 Mission Extra Thin Yellow Corn Tortillas
I Can't Believe It's Not Butter Spray
Pace Picante Sauce

Wrap the tortillas in a damp paper towel and heat in the microwave for about 30 seconds, just until warmed through.

*One at a time*, spray each tortilla with ICBINB, add a dab of Pace, fold into quarters and enjoy. (Don't share, these are all for you.)

One of the best things about this snack is that you have to take your time eating it.

And keep some paper towels at hand - these can be a little messy to eat.

I like to make mini meatloaves using a muffin tin. They are easy to make and cook quickly. All you need is a pound of extra lean ground beef, stuffing mix, water. You can add what kind of seasoning. Spray a muffin pan and put in meat mix topped with your favorite sauce bake for about 30 minutes. Add your favorite shredded cheese and bake 5 more minutes or until cheese is melted. You can use healthy low-fat ingredients for less calories. The best part about these meatloaves is that no one fights over the crispy end pieces. My family loves them. I usually serve them with a frozen vegetable or fresh broccoli that I cooked in boiling water two minutes and then quickly put under cold water. It makes the broccoli greener.

We love cutting up onion, red - yellow - and green peppers, mushrooms, celery and sauteeing them in light balsamic vinegerette dressing.

Hubby's favorite is cooked yellow rice, two cans of black beans, one drained and heated, put over rice, topped with fresh chopped onions, salsa and a little sour cream . This is quick and easy. We did order this at one of our favorite resturants, but is so easy to make and saves money making at home. This can be complelely finished in the lenght of the time it takes the rice to cook

Here is a so easy dish I love I got it here.I cook mushrooms and walnuts together in olive oil and I add onion and garlic powder to mine.I love it and it doesn't take much to fill you up and so healthy! emoticon
