I made the most amazing meal last night- Chef Meg's slow cook curried vegetables. My husband and one son do not eat anything different- it is very hard to get them to try new things. My other son will try anything at least once. Well this meal came out great- I did make some changes I only used 2 cups of the chickpeas, i added cubed tofu, and did not add the peas. I also used whole coconut milk. I made brown rice with it. Everyone was like oh no, yuck tofu, uggghhhh.. then i told them to try it. My husband looked at me and i said you always tell me to cook healthy- LOL. He actually ate the whole thing from a man who does not eat vegetables, poo poo's tofu- he ate it all. i was quite proud of myself..LOL
