Yesterday, everyone wasn't in the mood for dinner but for lunch we had Eggplant Parmesean and today's lunch is grilled salmon with mustard glaze and blackeyed peas salsa.

Call me Sandy. My goals are reaching and maintaining 120 pounds, running a 5K race and performing 48 push-ups in a minute.

Tracy I will look for the monk next time I go to Whole foods they have quit a variety of seafood. LobsterI just love so I probaby would like the monk too. Yesterday we had. Tuna steaks from Trader Joes. Baked with EVooand cracked pepper topped with lemon yummy

Babciatea. Another name for monkfish is poor mans lobster. It is wonderful and I make it wrapped in tin foil with a bit of white wine and mushrooms and garlic. So tender. I can't find it in stores so I usually just have it shipped to me which is fine.

Your dinner sounds fabulous.

Tracy I never tried monk fish is it a white or fatty fish ? Today we will have garlic shrimp. evoo, garlic, parsley and lime juice shrimp marinate in the above. shredded or thinly sliced zucchini sauted briefly then shrimp heated and tossed with squash.

1/2 cup Black beans, 1/2 of a small sweet onion, 1 cup of canned tomatoes, 2 tsp each: almond oil, Italian herbs, turmeric, cumin, and garlic.

Some kind of veggies in sauce over rice w/ cottage or ricotta cheese on the side. Last night had wild Copper River Red salmon directly from Alaska--my stepson brought about 10 lbs of it w/ him when he visited us in Sept (on ice in his luggage!!).

Went to Seasons 52 for dinner. Incredible place and a chain -- although not a huge one -- so see if you have one in your area.

Had blackened fish tacos to knock your socks off. Spicy, but not overcooked into plastic as is so common of anything blackened. Can't recommend it more!

Have any of you ever tried kale chips? I bought extra kale because it was on sale so "wasted" some by making chips. Dry the cleaned kale, toss with a little olive oil, spread on baking sheet, sprinkle with some coarse kosher or sea salt and bake at 400 for around 10 - 12 minutes. They were great to munch on, but I also sprinkled some on top of my pasta dish for dinner.

For tonight I'm going mediterranean, as usual, making a big bowl of tabouli, a greek salad and making babaghanoush.

For my greek salad I make the dressing with olive oil, red wine vinegar, chopped garlic and dried oregano.

If anyone wants recipes for the above, just let me know. All super easy.

Sounds good! I had "Annie Chungs,Sweet & sour soup"-very
comforting when you aren't feeling well-my go to sick soup.
Have to admit I like most "fake meats" myself-don't like
any of the "Tofurky" products though...I like the "Quorn
chicken stuffed with goat cheese & cranberries"-some "fakes"
are good-some aren't-guess it is what it is...

I stumbled my way into a delicious dinner. Made the Shallots version of the Cooks Illustrated couscous cooking method. Made some Savory Spinach and Tomatoes from the SP recipe collection, added some cumin, extra garlic, veggie broth along with some black beans. Tossed all of that over the couscous and it was wonderful. Could be modified in so many ways.

I know what you mean about mimicing meats, mostly because I find them a disappointment (although I love Quorn for Quorn's sake not because it's a chicken substitute).

However one of my favorite cooking ingredients is Not Chicken Broth. It's a light taste and color that swaps in nicely for any recipe that calls for chicken broth but the ingredients are all vegetables!

amy's low-fat no-chicken noodle soup with pickled carrots + fennel and a slice of rosemary olive bread. i don't normally try food that mimics meat, but this is surprisingly yummy and is good for a canned soup!

It's a really good team. Pleasantly active and supportive. I like this team and my Food Rules team, but they tend to be about the food itself, naturally, not the issues I have surrounding them. WFG and ICMYT take up that slack.

Oh, now that I LOVE. Just order an appetizer in a restaurant and give it a try. Most of the pieces are just rings, not the squidy looking things, which I really don't like and just avoid.

The taste is extremely mild. It's more a nice firm (although it can get very chewy if overcooked) texture than anything else. But the sauces and stuff people serve with it makes it delicious.

I'd rather have the fish, personally. I've gotten really, really tired of shrimp. Used to love it, but now I avoid it whenever I can because there are so many times when I really can't.

It was a guest on her show! He suggested you could use
low fat sour cream...she stood behind him saying NO!
Wish I could remember his name.
Oh-but he was making the tacos with this great shrimp-
the shrimp I had in the freezer had freezer burn thus
the tilapia!

Macaroni and cheese made with whole wheat pasta, reduced fat cheese, fat free evaporated milk, spinach, onions, garlic, and whole wheat bread crumbs on top. I've been craving a comfort food and was able to satisfy that with this concoction that has only about 200 cals per serving. With some steamed carrots on the side, it was a meal for me.

I've got a cold, so I defrosted some soup -- chicken soup made with Quorn "chicken" tenders and veggie broth.

Lunch was an Amy's Organic pizza. VERY tasty and highly recommended to anyone whose looking for a good frozen pizza to have on hand.

made sardines with a spicy tomato sauce over pasta.

I posted the recipe I made in the recipe section. I'll be having this often in the future!

Also posted an equally tasty recipe from Alton Brown's Good Eats -- Sherried Sardine Toast. I had that last night! Talk about good eats!
