Skinny Fruit & Yogurt Salad

Yields: 6 | Serving Size: 1 cup | Calories: 136 | Total Fat: 0 g | Saturated Fat: 0 g | Trans Fat: 0 g | Cholesterol: 1 | Carbohydrates: 33 g | Sodium:12 mg | Dietary Fiber: 4 g | Sugars: 25 g | Protein: 3 g |

Ingredients
• 1/2 cup plain Greek Yogurt, fat-free
• 2 teaspoons freshly squeezed lemon juice
• 1 tablespoon honey
• 2 pears, cored, peeled, and cut into 1/2-inch cubes
• 1 cup sliced strawberries
• 2 apples, cored, and cut into 1/2-inch cubes
• 1 cup seedless grapes, sliced in half lengthwise
• 1/4 cups raisins
• 1/4 cup diced celery

Directions
In a small bowl, combine yogurt, lemon juice and honey. Cover yogurt mixture and refrigerate while preparing fruit.
Combine all fruit in a large salad bowl. Add yogurt dressing and lightly toss to coat. Refrigerate until ready to serve. For best results, serve salad within 1-2 hours of preparing.

I have not made these yet, but they sure looked good. this came from a friend on facebook.

7 CALORIES BROWNIES
(who doesn’t love brownies??)

3/4 cup nonfat Greek yogurt (I used vanilla)
1/4 cup skim milk
1/2 cup Cocoa powder
1/2 cup Old fashioned rolled oats (like Quaker)
1/2 cup Truvia (or any natural/stevia based sweetener that pours like sugar)
1 egg
1/3 cup applesauce
1 teaspoon baking powder
1 pinch salt
Preheat the oven to 400°F. Grease a square baking dish (I used 8”x8”). Combine all ingredients into a food processor or a blender, and blend until smooth (about 1 minute). Pour into the prepared dish and bake for about 15 minutes. Allow to cool completely before cutting into 9 large squares.

I think I saw that recipe right here on SP!! Y'all spaghetti squash is amazing. Since I'm a diabetic, I've used it for years in place of pasta. It is actually pretty versatile and easy to prepare no matter what you're gonna do with it. It has very little calories or carbs which makes it extremely healthy and fantastically wonderful for people still struggling with blood sugar issues!! My kids even love it and that's saying ALOT. Thanks for sharing your recipe, Connie!!

I absolutely love spaghetti squash, if you haven't tried it you should you don't know what your missing. I use it in place of regular spaghetti. I'm sorry but I don't remember where I got this recipe.

Baked Spaghetti Squash with Garlic and Butter
Ingredients:
1 small spaghetti squash (about 3-4 pounds)
2 tablespoons butter
2 cloves garlic, finely minced
1/4 cup finely minced parsley (or basil)
1/2 teaspoon salt (or to taste)
1/4 cup shredded Parmesan cheese
Directions:
1. Preheat oven to 375F. Pierce squash a few times with sharp paring knife (to let steam escape). Bake spaghetti squash for 60 minutes, or until a paring knife pierces easily through skin with little resistance. Let squash cool for 10 minutes.
2. Cut squash in half, lengthwise. Use a fork to remove and discard the seeds. Continue using fork to scrape the squash to get long, lovely strands. If the squash seem difficult to scrape, return the squash to bake for an additional 10 minutes.
3. Heat a large sauté pan with the butter and the garlic over medium-low heat. When garlic becomes fragrant, add parsley, salt and spaghetti squash strands. Toss well, sprinkle in the Parmesan cheese and taste to see if you need additional salt. The spaghetti squash should have a slight crunch (i.e. not mushy) - but if you like it softer, cover the pan and cook 2 more minutes

Ingredients

1 whole packet of Fat Free Sugar Free Pudding

Chicken Marsala
My family loves this meal - super high in protein and it's better than you can get eating out!!

Ingredients
3 oz Boneless Skinless Chicken Breast
1 tsp EVOO
1 clove garlic
.25 cup mushrooms - sliced
2 Tbs Marsala Wine
.25 cup Low sodium chicken stock/broth
1 oz frozen peas
1 tsp Thyme
salt and pepper to taste

Nutritional Info
Fat: 7.7g
Carbohydrates: 11.6g
Calories:219.5
Protein: 23.0g

Brown chicken breast in olive oil with garlic over low heat (so the garlic does not burn) for 3 minutes per side. Add stock, wine, mushrooms, thyme and simmer for 8 minutes until sauce reduces and thickens (add a small amount of cornstarch slurry to thicken sauce even more). Add peas, simmer for additional 2 minutes until tender.

Serving Size: Makes one meal

Broccoli Raisin Nut Salad (with Greek Yogurt)
This is one of my "go to" recipes - high protein, good carb, good Omega 3 fats, and oh so yummy!!

Ingredients
2 small or one large head of broccoli (or 1 pound broccoli florets)
1/2 cup Greek yogurt (Yoplait 100 cal Vanilla)
2 tablespoons apple cider vinegar
1 tablespoon sugar substitute (truvia, stevia, etc.)
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons minced onion (more if you like)
1/3 cup raisins
1/2 cup toasted almonds (slivered, sliced, or roughly chopped)

Nutritional Info
Fat: 5.5g
Carbohydrates: 14.1g
Calories:119.3
Protein: 5.7g

Directions
Put minced onion in small bowl of cold water to take away some of the bite.
Wash and prepare broccoli into small bite-sized florets. If using whole broccoli, peel large stem, cut thin slices on the diagonal then cut slices into small matchsticks. Put broccoli in large mixing bowl.
In a small bowl, mix yogurt, vinegar, sugar, salt and pepper. Add to broccoli along with onions and mix.
Add raisins and toasted almonds. Mix and refrigerate until ready to serve. Make a day ahead if you like. Leftovers also keep well for several days in refrigerator.

Serving Size: makes (5) 4 ounce servings

Here is a family favorite.

MEXICAN CHICKEN & RICE CASSEROLE

INGREDIENTS
1 can FAT FREE Cream of Mushroom Soup
1 can FAT FREE Cream of Chicken Soup
1 can water
1 can Black Beans drained & rinsed
1 can Rotel diced tomatoes with Chiles
1 1/2 cup Rice (I use basmatti rice)
1 package Taco Seasoning
Cilantro & green oinions chopped (optional)
3 lbs frozen boneless, skinless chicken breasts (about 6)
1 cup shredded cheddar cheese (I use Sargento reduced fat)

DIRECTIONS
Preheat oven to 350
Coat 9x13 glass casserole dish with cooking spray
Mix together the soups, water and taco seasoning, then pour into the bottome of the dish.
Sprinkle the rice over the soup mixture, then place the chicken (still frozen) on top the rice.
Pour the beans and tomatoes over the chicken, then add the cilantro & green onions.
Cover with foil and bake for 1 hour 40 minutes.
Remove foil, add shredded cheese and bake for an additional 10 minutes or until cheese is melted.


NOTE: I cook my rice before I add it to the dish.
