Does anyone have any advice on quick easy meals for busy nights? I am going back to work after a 9 month lay-off (yay new job) and I'm looking for something quick and easy for nights when I have to pick up my daughter and go straight to practice (she plays soccer). I'm a single mom so there's no one to help with runs to practice or cooking during practice. I have thought of going towards crock pots but I've had a hard time find low cal recipes. Any advice?! Thanks.
