My thoughts exactly, re: Jersey Shore...sheesh! Buried down in some deep holler in the bowels of Pennsylvania is a spot in the road named Jersey Shore...?!?! Somebody flunked geography...lol!
Hey there are LOTS of shorter rides in our area that you can consider. A nice, relatively flat ride down to Hallstead via route 7 and returning through Great Bend via 11 gives one at least 20-30 miles depending on where one starts. That's a great ride to knock down some miles and build up some resilience.
Another shorter ride which is on par is out to Owego & back via either 17C and / or 434.
To build up some hill climbing one could start in Chenango Forks at either St. Rita's or the fishing access and head up route 79 through Tunnel until you hook up with route 7 and return up into Port Crane and then up 369 up through either Chenango Valley State Park or until it hooks up with 79 in Fenton. There are LOTS of hill climbing opportunities around here...oof!
Other rides which are pleasant, relatively un-hilly...again from Chenango Forks up back river road (CR 32) into Greene (20 mile round trip) and beyond to Oxford (35 mile round trip) or even Norwich (62 mile round trip) depending on how much of a ride one wants to make of it. Some hills, but nothing too strenuous. OR from Chenango Forks up into Whitney Point (20 mile round trip) and Marathon (40 mile round trip).
If anyone ever wants to round up a few of us for rides speak up and I'll bet we could get at least a few of us together! :-)
