This is awesome! I can't wait to try it. I also sent a link to my DD. y grandson LOVES yogurt. and my DD loves her crock pot. What a great combination! Thanks so much for sharing!

The basic recipe for yogurt cheese is to just keep straining the yogurt, adding a little salt (1 tsp. per 3 cups of yogurt). You can add herbs and other seasonings at this point also. Strain until the texture is like cream cheese and it holds its shape when you press it.

FWIW: I believe the only difference between regular and Greek yogurt is the amount of water that has been drained off from it. Less water = more protein.

I think we did make "yogurt cheese" years ago for the paneer in an Indian recipe - we couldn't find "paneer" locally (or didn't know where to look!). It was also very good. I don't recall the recipe, but if I find one, I'll post it.

And with the cheesecloth you can drain for longer periods and get a thicker, cream cheese consistency for some recipes. Yum!

I love Chobani Greek yogurt, and I would say that the recipe we use (we heat the milk in the oven on the "bread-proofing mode") compares favorably, very similar, but maybe a bit sweeter and creamier. We use Wegmans organic 1% milk to make it - if you're looking for savings and don't mind regular milk, you could get an even better savings ratio. We also used cheescloth rather than coffee filters. It really does take a good, long overnight to heat to the right texture and strain, so if you try it, make it on whatever day your "weekend" falls on!
