I already have all my spoons and cups at the ready, so that part was no problem. Most of what I ate this weekend was already pre-portioned, but I did measure out anything that wasn't. I will post my recipes over the next few weeks as I try them out. I spent some time scouring for new ideas yesterday, and have my first recipe picked out. I want to make sure it's as good as I think it will be before I post it!

And thank you, Oloopy, for posting the Chicken Kiev recipe - I'm definitely going to try that!

Well kayla I am afraid I failed miserably on my personal challenges. I did get my water in and both sat. & sun. I drank 3 cups of coffee, over the 2 - however since I usually drink a whole pot - that was good. sat. I had 3 diet sodas - over the 2 and yesterday I had 5 beers so 3 over the 2. I worked out a lot so at least I got something right!

Thank you for the time and effort of trying to keep me "on track" LOL I'll get there eventually

If you think you want the cookbook, right now, Amazon offers it used at 27 cents plus $3.99 shipping in paperback and for 1 cent plus $3.99 shipping in hardback -- of course these are used so pay attention what is listed for the condition of the item, but not bad prices really. :-D

It was the first time I'd made it or had a version of it as well, but I liked it -- and it didn't stop me from modifying it originally either because I added a little more garlic and chives just because I knew I'd like them. And, I had some fresh parsley so I mixed it in as well instead of an either/or. I also crushed up a little more cornflakes because sometimes I make a mess and wanted to make sure I had enough to cover all the pieces well. :o\ (Note: I liked it better when I crushed the cornflakes more finely than just a quick crushing though.) Anyway, the recipe is listed below. Enjoy! (Let me know if what you think.)

Chicken Kiev
Servings 6

Prep Time: 30 mins Freeze: 30 mins Bake: 35 mins

3 Tbsp reduced-calorie spread, softened
1 Tbsp chopped fresh chives or parsley
1/8 tsp garlic powder
6 skinless, boneless chicken breast halves (approx. 1 1/2 lbs)
2 Cups cornflakes, crushed (about 1 cup)
2 Tbsp chopped fresh parsley
1/2 tsp paprika
1/4 c low-fat buttermilk or skim milk

1. Mix spread, chives and garlic powder; shape into 3x2-inch rectangle. Cover and freeze about 30 minutes or until firm.

2. Heat oven to 425°F. Spray square pan, 9x9x2 inches, with cooking spray. Flatten each chicken breast half to 1/4-inch thickness between sheets of plastic wrap or waxed paper.

3. Cut chives mixture crosswise into 6 pieces. Place 1 piece on center of each chicken breast half. Fold long sides of chicken over chives mixture; fold up ends and secure with toothpick. (I modified this after the first time I made it. Instead, I flattened the butter mixture and spread it over the chicken breast -- made it MUCH easier to roll up the chicken, and I think it helped keep it more moist.)

4. Mix cereal, parsley and paprika. Dip chicken into buttermilk, then coat lightly and evenly with cereal mixture. Place chicken, seam sides down, in pan.

5. Bake uncovered about 35 minutes or until chicken is no longer pink in center.

Nutrition Information (based on 1 serving):

Calories 200 (Calories from Fat 55); Total Fat 6g (Saturated Fat 2g); Cholesterol 65mg; Sodium 160mg; Total Carbohydrate 9g (Dietary Fiber 0g); Protein 27g Percent Daily Value (based on 2000 calorie diet): Vitamin A 22%; Vitamin C 6%; Calcium 2%; Iron 20%

Exchanges: 1/2 Starch; 3 1/2 Very Lean Meat; 1 Fat

Ooh, thanks for the tip! I'll have to look for that cookbook! I love the built-in portioning concept. I would be very interested in the Chicken Kiev recipe -- I've never made Chicken Kiev, so it would be something new for my family, too.

I know this post wasn't really "for me," but I wanted to comment on the information you left for Shannon: I have a Betty Crocker New Eat and Lose Weight Cookbook, and we've tried some of the recipes in it, and they were really good. Also, they help you with portion control because a lot of the dishes (like the one for chicken kiev) are made in portions, so they're "built-in" so to speak. I can share some of the recipes if you'd (or anyone else would) like -- just give me an idea of what kinds of foods you like to eat, and I'll see if they have a healthier version listed. I liked the chicken kiev and there was another one made with flank steak that has a cilantro/lime/green chili marinade that was really, really good -- especially once I sliced it and put it on a salad. :-D

Here is your reward for completing Thursday's challenge LOL

This weekend please try your hardest to do your individual challenge!

Kobe
~ Drink WATER ~ Limit all other beverages to 1 or 2 per day. (I can excuse alcohol if you count in the calories)
~ Take 10-15 minutes each day to stretch and reflect and think about all of the wonderful positive changes you are making and about everything else in your life that is positive. (If you start dwelling on negative things during this time, then do 15 crunches when you're done for every negative thought - HA)

Nurse
~ Make sure you get in your 30 min of exercise each day this weekend.
~ Try to plan out your meals for the whole weekend, or at least for each day, in the morning to help avoid running into any issues. If you have a social function to go to, eat something light and healthy before you go to avoid picking at things that are not healthy.
~ Eat at least 5 servings of fruit or vegetables each day!

Shannon
~ Find a place on your counter or in the most easily accessible cabinet to keep your measuring cups and measuring spoons. If you don't have a complete set of both, go buy some.
~ Measure all of your portions each day.
~ Find 3 healthy recipes to make that sound delicious but are low calorie. I find this especially helpful when I'm hungry and I'd really like to eat a large portion. If your plate is full and it's still low calorie then you feel like you are splurging when you're not. My particular favorite is to cut up a lot of various vegetables and sauté them with a low cal/low fat meat (turkey kielbasa is my favorite, chicken breast chunks work good too). Then you are getting a ton of vegetables which fill you up, give you a large portion but are still very low in calories. Find 3 recipes and post them in your journal here for you to try within the next week or two (or three)
