I have been eating lots of fruit and vegetables and cutting out the meat, so I fall right in line for the challenge

Breakfast - had blueberries, fresh strawberries, onions, green & orange peppers, banana, mushrooms
Lunch - will have romaine lettuce, cucumbers, onions, tomatoes, Mandarin oranges
Dinner - will have 1-1/2 cups broccoli and a navel orange, half a potato

That's plenty of produce for one day!!!!

I try and have a few vegetarian meals each week - beans on toast for lunch, sweet potato chili, etc.
