Why not make a one pot vegan meal and then have leftovers? I do that a lot.
For myself, I tend to have a salad, a sandwich with vegan proteins ... but even a bean and rice burrito means I have more beans and rice after that one burrito. Same with these wonderful lentil loaves I got from the store.
Vegi burgers maybe?
Or maybe can you do a shared thing, like make marinara sauce and then heat up vegan sausage for you, meat sausage for him, and you have essentially the same meal?
I don't know about a link. You need to belong to Yahoo. If you type in vegetarian_group in the Yahoo groups you will find it. If you send me your e-mail address by SparkMail I can forward one of their posts and you should be able to find the group from there.I did not find it too helpful for me, but I think it is a good group. They have tons of recipes in the files. Perhaps you could half the amounts? I am not a great cook. I just do basic stuff.
Does anyone know where I can find vegan recipes that are quick and easy and online for one person? My husband is a meat eater and I am not, I really adore the vegan recipes but they are all for families. So I did try to divide them but I still end up with at least a leftover for one more meal. I have tried to talk him into eating vegetarian or vegan, unfortunately his response was. "You eat what you want I will stand behind you all the way whatever you decide, no way am I going to eat that stuff". Every time he sees me cooking my meals he is like whats that? When I tell him he leave the room and says "OH God" I got both of our cooking down to a science. His gets cooked either before or after me. I just figure I can't force a person to eat what they don't want to eat. So if anyone has a lead on online recipes for one little old lady vegan like me, please let me know.
