My favorite bike is my Mercian King of Mercia I had custom built. It is a fixed gear, so I only use one gear at a time. I do have 2 chainrings up front and a flip flop hub in back, so I do have some options. This bike is good for just about anything though a but heavy. It has seen everything from single track to fast club rides. My second favorite is a KHS Flite 100 track bike, also a fixed gear.

I ride a Redline Monocog. It's got one gear, made of Chromoly steel and has Mary bars on it. I love my bike!! I ride it everywhere. I also have a Surly Troll with 9 gears that I ride sometimes and a little bike I built up myself out of spare parts that I hardly ever ride. But the Redline Monocog is the greatest.
I have no clue about the brand of the gears on my bike. I ride an old Huffy Stalker 12-speed that I bought at the local used bike shop almost 15 years ago. It's a 12 speed with a Shimano Tourney derailleur and is all I need for the kind of riding I do. My commute is relatively flat with a few modest hills so I really only use 2 or 3 gears at the most. I've started taking a few detours on my route to work to get in a few extra miles while it is "cooler" and have hit a few tougher hills where I needed a couple more gears but not often. Sometimes I'll look enviously at the nice new bikes at the local bike shop but I'm happy with what I have.
