Hi everyone! This is for all of you kitchen-witches out there like me who are constantly looking for new healthy recipes to try.

I'd love to do a recipe swap for healthy (and preferably seasonal) meals that you have (or would like to) serve at your Yule dinner. If you don't celebrate Yule (or if you celebrate any combination of the holidays this time around), that's fine too! Any of your favorite seasonal recipes would be welcome!

My husband and I always make Warm Apricot Glazed Cornish Game Hens with roasted root veggies on Yule. It's a simple recipe.

Prepare cornish game hens according to package.
Season with a few dashes of salt, pepper, and garlic

Chop 2-3 cups (total) of potatoes, parsnip, carrot, turnips (or any combination of your favorite root vegetables)into large slices.

Season with rosemary, thyme, and garlic - bake @ 350 until slightly crisp.

Glaze: Take a 1/4 C of apricot preserves (find sugar free if possible)to a small sauce pot. Add a few dashes of cinnamon, nutmeg and allspice. Depending on your "heat tolerance" add a small dash of cayenne pepper. Heat over low/medium heat until it liquifies.

Drizzle glaze over your Cornish Game hen.
