I am also allegic to corn, so is one of my sons. It is VERY difficult to cut out. I think it may be even more difficult now than it was when we were originally tested (abotu 10 years ago).
Our allergist had us on a rotation diet. And the rest of the time we just eliminated corn products completely.
You will really have to watch those labels closely!
Unfortunately, when we cut out the corn (and mold - which included cheese & etc), I gained weight. The back to basics way of cooking is in reality NOT a healthy way to cook.
Now days, I still pay attention to labels, but I don't exclude corn completely. For the most part, my meds help keep me on track. I did have a reaction that sent me to the ER in July, though.
