6 c. zucchini (for 9" pie) 1 1/4 c. sugar (I used Splenda) 2 Tbsp. flour 1 1/2 tsp. cream of tartar 1 1/2 tsp. cinnamon dash salt and nutmeg dough for double pie crust
Pare zucchini and slice lengthwise. remove seeds.(if large quarter) Slice. Put in small saucepan, add a little water and bring to boil, simmer until zucchini changes color and is slightly translucent. Drain well, cool! Add remaining ingredients, blend well. Place in unbaked 9" pie crust. Cover with top crust. Seal edges, cut slits in top crust. Bake at 350 for 45-60 minutes!
