I purchase Barilla whole wheat pastas. Earlier this year I made my first Vegan Lasagna using Barilla Lasagna noodles. Whole wheat pasta takes a little longer to boil but the taste and no fat is worth it. I also use tofuitti or tofu in place of ricotta, for cheese flavor I add Veggie shreds
parmesan, mozzarella and swiss mix.

If you are not fond of whole wheat, I also try lighter alternatives. Whole Foods farms sells a selection of artichoke spaghetti and spinach & tomato shells, spaghetti. These have helped my diet along tremendously while adding variety to my meals.

You could try subbing the mayo for greek yogurt. With spices, it should have the desired effect, and you're upping your protein, which should make it more filling.

I'm looking for suggestions anyone might have about (relatively) healthy pasta salad suggestions. I plan on using whole wheat pasta but am not sure where to go from there. Please no ~low fat~ alternatives to anything, I generally find it difficult to find a low fat product without gelatin or that doesn't have loads of added sugar. I'm more interested in recipes that use smaller amounts of full fat products or healthier oils and use those flavors to full advantage.

I've had some success using a small amount of mayo and mixing it with olive oil, balsamic vinegar, tomato, garlic powder, and assorted veg., but I still feel guilty eating more than just a little of it, and don't find it very filling.

Any suggestions would be most welcome!

BAKED TOFU PARMESAN


NOTE use only 1/4 cup breadcrumb mixture at a time if it becomes too moist it won't stick to the tofu.

NOTE I will provide a recipe for vegan parmesan after the recipe.

Note To press moisture out of tofu put quite a few kitchen towels on a counter. put the drained tofu on the towels. Cover with a few more towels. Cover with a flat object like small cutting board or dish and put about 2-3 pounds on top of it. Let rest for 25-30 minutes. While this is happening do I started the rest of the recipe.


Ingredients
1 lb super protein tofu or extra firm pressed
1 cup breadcrumbs. nutrition facts will be slightly off if you use white breadcrumbs. She made her own.
4 Tbsp vegan Parmesan. Easy to make.
2 Tbsp Italian seasoning.
1/4 tsp fine salt
1/8 tsp pepper
1/2 cup non dairy milk such as soy or almond
1 Tbsp cornstarch
1 28 oz jar marinara.

Preheat oven to 350 Line a cookie sheet with parchment paper. Can be found at walmart.

Turn tofu on its side and cut 12 even sized cutleets. Kind of vague. I tried to cut 12 slice lenght wise and mad long thin cutlets. That turned out pretty well.

Combine breadcrumbs vegan Parmesan, spices, salt,and pepper and use a mortar and pestle or food processor to grind to sand like consistenccy.

Whisk non dairy milk and cornstarch together and place in shallow bowl.

Dip each tofu cutlet into non dairy mixture briefly submerging and quickly into breadcrumb mixture.

Flip tofu over and press into breadcrumbs. Repeat until well coated.

Repeat with cutlets and place on cookie sheet with parchment

Spray with cooking spray and cook 12 minutes.

Flip respray and cook another 10 minutes.

Arrange cutlets on plate and cover with marinara. I heated up my marinara in a microwave. She doesn't.

Garnish with vegan Parmesan.

Vegan Parmesan
1 cup nutritional yeast found at whole foods and good heath food stores.
1/2 cup grinded almonds. Use spice grinder or food processor not a blender.
1 tsp salt.

Nutrition
Serves 4 Calories 274 Calories from fat 49 fat 5.5g, cholesterol 0, carbs 38.1, fiber 3.8 sugars 22.0 protein 18.8

LASAGNA WITH ROASTED CAULIFLOWER RICOTTA AND SPINACH

NOTE CAN ADD 1/4 FINELY CHOPPED BASIL TO REGULAR CRUSHED TOMATOS
NOTE FOR TIME MANAGEMENT BOIL WATER FOR NOODLES ABOUT 10 MINUTES INTO CAULIFLOWER ROASTING AND DON'T SHUT OFF OVEN AFTER ROASTING LOWER TO 350 TO COOK LASAGNA LATER

CAN MAKE ROASTED CAULIFLOWER RICOTTA A DAY EARLIER

Roasted cauliflower ricotta
1 medium size head cauliflower 1 1/2 to 2 pounds chopped into 1/2 " pieces
2 tsp olive oil
1/2 tsp salt
1 pound extra firm tofu
1/4 cup nutritional yeast flakes
2 Tbsp fresh lemon juice

Red Sauce
1 28 oz can crushed tomatoes with basil
2 Tbsp chopped fresh thyme
3 cloves garlic minced
1/2 tsp salt

To assemble
8 oz lasagna noodles
1 1/2 cups chopped spinach fresh
1/4 cup chopped black olives

preheat oven to 400
line a large rimmed baking sheet with parchment paper to keep cauliflower from sticking
place cauliflower on sheet and drizzle with olive oil
spray with non stick cooking spray and sprinkle 1/4 tsp salt
toss with hands to distribute salt
spread cauliflower in single layer bake for 10 minutes then flip with spatula
don't have to flip every one
bake for another 15-20 minutes until brown and toasty

in the meantime crumble tofu in mixing bowl
use hands to mash tofu squeezing until the texture is like ricotta cheese
add nutritional yeast lemon juice pepper and remaining salt
use fork to mix well

when cauliflower is done transfer to mixing bowl with ricotta mixture
use a potato masher to mash very well for a minute.
if it doesn't seem to mash well pulse in food processor
set aside

prepare the sauce
mix all ingredients in a bowl set aside

preheat oven to 350

pour thin layer sauce on bottom of 8x8 pan
line with layer of noodles
spread one third of cauliflower ricotta
layer with 3/4 cup fresh spinach
pour on a cup of sauce
repeat process to create another identical layer

top layer
layer with noodles
pour on sauce first
then put on ricotta mixture
no spinach in this layer

sprinkle with olives and press into tofu

cook 40 minutes


Nutrition Facts
1/6 recipe calories 300, total fat 6g, sat fat 1g, trans fat 0g, total carb 49g, fiber 8, sugars 9g, protein 16g, cholesterol 0, sodium 670, vit A 35%, vit c 150%,calcium 25%, Iron 30%

Spanish Style Stuffed Peppers
2 whole green Bell Peppers (seeded)
3/4 C frozen corn thawed (or fresh)
3/4 C black beans drained and rinsed
1/4 C Cornmeal
1 T Chili Powder
1 t onion flakes
1/2 t cumin powder
3/4 c salso

Preheat oven to 375 F Cut peppers into boats and clean out insides. Heat all other ingredients plush one half cup water over medium high heat until thick and bubbling (around 3 minutes). Place peppers in an oven dish and spoon mixture into peppers. Cover with foil and bake twenty minutes or until peppers tender.
this serves 1
420 calories
(I added some mushrooms to this dish about 1/4-1/2 cup in the mix)

I experimented with Noodles & Co's Pasta Fresca. I found a recipe here: www.food.com/recipe/noodles-co-pasta

I played around with it and I think it's delicious.

2 oz Cappellini pasta (or whatever you have-about a cup of cooked cappellini)
1 Tbsp Extra Virgin Olive Oil
1.5 Tbsp Balsamic Vinegar
1.5 Cups Spinach-large stems removed
1 Roma Tomato-cut into large chunks
1 Tbsp Feta Cheese-crumbled
Pepper-to taste
Garlic Powder-to taste

Cook Noodles according to package directions. When Pasta is almost cooked, add Olive Oil to a saute pan and heat on medium. Add Spinach and cooked Pasta to saute pan. Cook until spinach starts to wilt. Add Roma Tomato, and half of Feta Cheese. Cook for approximately two more minutes until tomatoes are warm.

Pour into dish, add remaining Feta. Serve and enjoy.

-Of course it's all customizeable, less oil, less balsamic or more. And of course more or less spices. It's really yummy and takes about 15 minutes to make.

I made a really good spaghetti sauce the other day using a normal recipe but substituting some cooked beans for the meat. It turned out really well! The mushiness of the cooked beans went really well with the spaghetti sauce and added just the right amount of protein. I never would have thought bean spaghetti would be good but it was awesome.

Sometimes it feels as though most of the food I make is just to quiet my hunger, but fails to excite me. But then I made this, three times in a row. I have eaten it once and twice a day for almost a week. It still makes me go "Oh my god" (Imagine my mouth full.
First I made a slew of these crepes. I have a teflon pad I hide from my men, I brush olive oil in it for added lubrication.
Crepes
• 1/2 cup brown rice flour
• 1/2 cup almond flour
• 1/2 cup potato starch
• 1/2 tsp baking powder
• 1/2 tsp salt
• 3 cups soy milk
Preparation:
Mix the dry ingredients and make a well in the middle. Pour in the soy milk and combine. The batter should be very thin.
Heat a non-stick crepe pan and lightly coat with a non-stick spray.
Pour in about 1/4 cup of the batter, tilting the pan so that the batter covers the bottom with a thin coating. Cook until it is browned from underneath and starts to pull away from the edges. Flip carefully and brown on the other side.

Then I cut up in a bowl something that felt like an Asian salad (always a little different)
I have a peeler that is serrated so it juliennes:
Carrot, garlic, red pepper, cucumber, green onion, tofu, cashews, peanuts,... whatever as Asian salad might look like.
* I also put in mint, or cilantro, or basil,... or a combination
* I put in a couple of tablespoons to mingle the flavour a bit: veg oyster sauce, peanut sauce, mirin

Crunch in the salad
Bready ( but thin) crepe
sweet and sour

I hope someone else finds this a yummy as I do

This is my favorite time of year for buying produce. Many of my favorite vegetables are at the peak of harvest which means many weeks of delightful produce at farmers markets and coops. It's a bit too early here in MN for squash, but greens are in abundance.

This year I have been using Swiss chard a lot. It's so versatile, and I love how it keeps its color during cooking. An added bonus of Swiss chard is that the stems are not tough, so they can be cooked and combined in a dish. Kale stems are too tough to use in a dish IMHO. Swiss chard also doesn't get bitter like many of the other greens. Just be sure it's fresh and that the leaves are bright and colorful; avoid buying chard with dull, yellowed leaf tips or wilted stems.

I want to stop being a processed foods vegetarian and start making my own food. WIth that said I bought a bag of red kidney beans. Any yummy ideas for a newbie to beans?

Also, I found this recipe on Spark but I do not want to use chicken broth, is there a substitute I can use?

.5 cup (pre-cooked dry measure) whole grain instant brown rice
.5 cup (pre-cooked dry measure) lentils

Hi Veggies,
Had a few sweet potatoes baked up in the fridge. I like to have some food prepped for the week, so I tossed them in the toaster oven and kept them in a bowl.

Anyway, today I got home late from work and was very tempted to partake in the turkey sloppy joes that the he-men of the house were eating. But did I? NOPE! :)

Mixed together 1/2c black beans and a few spoonfuls of medium salsa about 1/2c, and served it over the sweet potato. Topped it with a few slices of avocado and voila! For a little over 300 calories, a beautiful, filling, tasty dinner (or lunch).

Here on SP recipes, there is a wonderful recipe for seitan chorizo. It's fantastic!
My carnivore hubby asked for another piece, and it was very easy to make. I encourage you to look it up and give it a try. It's worth cleaning out the food processor!

MMM MMM MMM I made this the other day after having it my inlaws and was fabulous. Combine in a bowl 1 chopped cucumber, 1 chopped avacado and chopped onion ( to your taste). Sprinkle with garlic powder (or garlic salt) and cliantro to taste as well. I don't like cilantro so i skip it. Then squeeze the juice of half a lime ( i use a whole lime) on top...stir and enjoy. I like it plain, on top of lettuce, in a pita pocket, with pita chips... Enjoy!

Your ratios might have been off a bit. I've encountered the crumbly texture when I added lots of veggies without a binder like flour or cornstarch. Salsa adds a lot of moisture, too. This is a great frittata recipe by Robin Robertson www.vegnews.com/web/articles/page.do

She uses a bit of arrowroot as a binder. I always use a food processor for creaming the tofu when it's for a frittata, enchiladas, or stuffed shells. It produces a lovely creamy texture that you can't get by just crumbling or mashing the tofu .

I made an awesome Zucchini Fritatta but the final product although very tastey was very crumbly. What could I have added??

There are links to most of the recipes in the plan. Most of the recipes were developed by Tal Ronnen, author of The Conscious Chef. You can Google the other recipes and find them online. For example, the King Oyster Mushroom recipe is on Epicurious. You just have to be sure the dashi you use is made with kombu or shiitake mushrooms if you don't make your own. Many of the commercial dashis contain sardines or tuna.

Hello Everyone,

This isn't so much a recipe as a suggestion. I have recently noticed that a normal sized whole wheat tortilla can vary in calories from 110 to 200+ calories! I would like to have some flavor for that kind of calorie hit, so I started making SOME of my wraps with nori sheets. They only run about 15 calories, and they can add a little healthy smidgen of minerals.

Make no mistake, this doesn't work with everything, but I make a carrot, cucumber hummus wrap with nori sheets and holy sushi, Batman, it was good! I also sliced up a veggie burger and added some avocado and thinly sliced tomatoes and that was another winner.

Looking forward to learning more on the boards!

I know this one should be eaten in moderation but it's great! My friend tries to eat gluten-free so I used spelt flour and it was wonderful... too wonderful if you know what I mean!


All-In-One Vegan Chocolate Cake

Wet Ingredients Dry Ingredients
½ cup softened vegan margarine 1 2/3 cups all-purpose white flour
1 Tbsp vinegar 2/3 cup unsweetened cocoa powder
1 cup soy milk 1 ½ cup turbinado sugar
¼ cup water 1 ½ tsp. baking soda
1 tsp. vanilla 1 tsp. salt
½ cup water 2 tsp. Ener-G-Egg Replacer


1. Preheat oven to 350. Prepare 2 round layer pans, 8” x 1 1/2 “ with Pam, or slightly oil and flour.

2. Put vinegar in cup and add soy milk. Set aside.

3. Place flour, cocoa, sugar, baking soda, and salt in a large bowl and mix together well.

4. Mix Ener-G Egg Replacer and ¼ cup water until smooth.

5. Add margarine, vanilla, soured soy milk, ½ cup water and egg replacer to dry ingredients.

6. Beat with electric mixer for 3 minutes at medium speed, scraping bowl frequently.

7. Pour into prepared pans.

8. Bake for 30 to 35 minutes, or until wooden toothpick inserted in center of cake comes out clean. Remove from oven and let cool in pans for 5 minutes. Remove from pans and cool on cake rack until cold. Frost as desired.

Peanut Butter Frosting - For 2-layer 8” cake

½ cup peanut butter ½ cup margarine
2 cups powdered sugar 2 Tbsp. soy milk

Whisk or blend till smooth and creamy.

My wife makes a great vegan chili. It takes some chopping and cooking, but she makes a huge pot and we have food for the week. Many people can't tell that it is vegan and think that it has meat in it.

I was on the Earthbound Farms website earlier looking for a recipe. Today's seasonal food spotlight is on spinach, one of my favorite foods.
