Delicioius meatless tomato sauce with whole grain pasta. Serve with green salad and diet vinagette dressing.

I sautee shallots, mushrooms, herbs in smart balance healthy start oil. I add morningstar crumbles - no salt tomato sauce and season with garlic seasoning - chili powder - heat to condense sauce. serve this tasty sauce over barilla multgrain thin spaghetti - top with galaxy foods Go Veggie mozzarella shreds. One cup pasta cooked with about half cup sauce is only
325 calories!

Full and satisfied after meal. Not hungry.

Looking forward to Nacho night! I usually do quick saute with peppers, onions, garlic, some cumin seeds, a squeeze of lime juice and throw in a can of black beans, I'm trying out the Lays Baked Tortilla scoops tonight, they actually had a lil less cals and fat than my regular tortilla chips, so I though what the heck! I also am throwing together a fresh salsa with tomatoes,onions, garlic, jalepeno, cilantro and lime juice, I'll do one serving of chips, throw on a layer of pepper bean mixture, salsa, and 1 tbsp of guac. Can't wait!

Harperlady, I use zucchini as my spaghetti noodles. I have a spiralizer, but you can use a veg peeler for a broad noodle. I mix a little sesame oil with garlic, soy sauce , red pepper flakes and sauté until desired temp - great eating! Also use cauliflower and make rice.

I have been looking into recipes to go with the way I eat, trying to stay away from cheese is my downfall but it's getting easier, so any veggies recipes that anyone would like to share that they have improved apon, I have checked the recipes here on spark and have some ideas, looking forward to cauliflower pizza crust.

( only those who risk going to far know how far they can go)

I just prepped for lunches and dinners this week. A few things we are having have been Pinterest finds. A while back I found a Spicy Thai Noodle recipe that we have made over and over again. Two new finds for this week were a copy-cat Olive Garden salad dressing (looks and smells great!) and an avocado dressing for tacos that I'm really anxious to have!

If it is to be, it is up to me!

Hi everyone!! How are you doing? I haven't been around in a while, but I'm still here and want to be an active part of this group.

I have my first cooking demonstration on Thursday. The class has eight people in it and demo-ing an appetizer, entree and dessert that are vegan. I'm a little nervous about it.

I am a vegan. I switched from whole foods perhaps 5-6 months ago. I decided to do a new recipe every week about a month and a half ago and it really got me into eating vegan. Prior to that i was eating the same breakfast, dinner and lunch every day.

Hi! I was hoping this team would be more active. Is there an active Vegetarian Team on SP? I have been doing really well on my eating but I have had some meat. I am a transition Vegetarian and I want to learn more about how to balance food and what to eat. I want to quit eating meat all together because I am sometimes really ill after eating it.

I am reading a book by Dr. Neal Barnard called "Foods That Cause You To Lose Weight". I am not into the actual menus and foods part of the book yet.

So far I have been eating healthy all day and I am happy about that. I put on a big crockpot of cabbage, celery, green beans, hominy, and some garlic salt. It is smelling good. I will eat some tonight and have enough for leftovers a couple times. Usually I make this with tomatoes, carrots, onions and green beans. But I forgot to get the other ingredients, so this is why I did it different today. Oh, I also threw in some broccoli and stems.

I hope this team becomes a little more active. I was hoping to learn a lot from the other vegetarians and vegans on this team.

Hi. I started making a healthy snack of oatmeal, peanut butter, applesauce, raisins. I ate 2 and I am a little tempted to eat more but I am going to put the rest away until tomorrow. These are supposed to be 55 calories each.

I have had a good day so far. I walked outside for awhile even though it was chilly and windy. I did one of Coach Nicole's sitting exercise tapes. She used dumbells but I didn't as I am getting over a bad neck injury. When I finished, I could really feel the muscles complaining.

I have a cookbook called "Foods That Cause You To Lose Weight" by Neal Barnard. It is Vegetarian. So I am going to start reading it tonight. I will let you know if it seems good. I also have another book by him called "The Power Of Your Plate." I will look into reading that soon too.

Now, Is the time to be healthy!

a good cheese substitute is "veggie shreds" which has several different flavors. I stay away from soy also for female reasons. It is too much estrogen for me and I cramp like crazy. The veggie shreds melt awesome and I can hardly tell a difference from regular cheese. I've only seen it available in the shredded cheese form but I haven't needed any other kind so it hasn't posed a problem for me personally. I hope this helps! :)

I'm not vegetarian (so I'm a.k.a. 'the enemy' to some), but I am trying to drastically reduce my red meat consumption and cut pork out of my diet, without adding more foul. I eat fish, seafood and eggs, and don't plan on cutting them out of my diet.

One of my BFFs is a vegan animal rights activist, so when she's in town I try to have a new dish ready for her to try. I dabble in vegan baking, mainly because I am still trying to make cookies as good as the ones made by the Hare Krishna restaurant in Toronto back in the early 80s.

I love dairy, but I do my best to avoid soy products (I know it's controversial so you'll have to message me if you want to know about my reasons for that).

Are there any non-soy dairy substitutes available? I use almond milk for many things, but what about cheese and yogurt substitutes?

Hi all. getting dark earlier - do not like it.. but got nice cool weather - love it

If you use the newer recipes to make seitan, the process is much less involved than the traditional method. Using vital wheat gluten really cuts down the time. Robin Robertson has some very good recipes for making your own seitan as do many others. Here are links to two of her seitan recipes

A couple of great vegan cookbooks are "The Garden of Vegan" and "How it All Vegan" by Tanya Barnard and Sarah Kramer! They are super easy recipes and use ingredients that I can usually find in my garden or local rural grocery store.

I have been thinking about making my own seitan too! I haven't ever tried it because tofu is pretty much as veggie friendly as it gets where I live. I just wonder would it be worth the effort?

I'm trying to move away from processed foods in general, but that will be a much slower process, as I have relied on them for YEARS and do not have much in the way of cooking skills. I use Morningstar Farms foods, not that they are any better.
I hope to learn to make my own seitan/wheat meat from scratch. It sounds easy enough, but then there is actual skill. We will see. I have never been a fan of tofu, but I will try again at some point. Just not yet.
For now, just trying to cut back on cheese, eat more fresh plants, drink more red wine :-)

Hi - I'm a new member to this group and, like you, fall into the vegetarian lifestyle trying to go full vegan. I found that changing over to organic parmesan cheese was a good way to begin cutting out cheese altogether. It gives you a lot of flavor and you don't need much - besides that, you're less likely to cut off a piece to eat by itself. I have a few "feel good" recipes that I go to when I'm craving cheese (that obviously don't include cheese) ... one is Dave Lieberman's Moroccan Chick Pea Soup --- it's very satisfying in the same way that cheese is (for me). I have been vegetarian for 18 years, trying to go vegan this year as I managed to gain quite a bit of weight over the last few years and want to be healthy - I already don't drink milk or eat eggs, but I do eat cheese (mmmm, cheese is my downfall), and I eat stuff made with either (bread, brownies, chocolate, etc).
I have just ordered several books to help me make the switch, but I am not much of a cook and I'm pretty picky, so it will be interesting.
I have a ton of veg cookbooks, but most of them rely on eggs and dairy, so I will likely sell or give them to others, and focus on a few vegan cookbooks. Not hard to add cheese, but hard to substitute, so better to just stay away.
So now my vegan cookbooks will be my new reference material.
I really like Dr. Esselstyn's book Prevent and Reverse Heart Disease, which has several recipes. It's pretty hardcore, but if you really want to be healthy or have a family history...

Be sure and press the water out of a block of tofu before using it. Just put some paper towels in a colander, set the tofu in and place a small plate on top. Then sit something heavy (like a big can of something) on top of the plate and let it sit for awhile. Makes a big difference because then the tofu can soak up other flavors. You can also press it and then freeze it for at least 24 hours. Has more of a meat flavor that way.

tryed a grilled vegies with tofo, still not sure what i am doing wroung with tofo!

I have made the tuna with garbanzo beans. Not bad. But I like tofu egg salad better. I press my tofu and crumble it into a bowl, add dill relish, mayo and a touch of mustard. once the flavors blend in the refrigerator, it tastes a lot like egg salad. It doesn't last long in my house and I always get a kick out of my granddaughter, who won't touch tofu with a ten foot pole. She makes sandwiches out of the "egg" salad and never has known that it was tofu.

WOW! That fluffy peanut butter sounds amazing! I'm going to make some today. What a great idea.

Have you ever made "tuna" salad with garbanzos? Just the regular ingredients (vegannaise, sweet pickle relish, red onion) and mashed garbanzos. Add a little Kombu for that 'fishy' taste, and voila! "Tuna" salad!

Found a new recipe I love. I call it fluffy peanut butter. I drain a can of garbanzo beans and put them in my blender along with a half cup of peanut butter and some sweetener. I either add a bit of the bean juice or some water until I get a nice fluffy mixture. I store it in a container in the refrigerator and use it spread real thick on toast with some all fruit jam. Really good and high in protein. Makes a quick breakfast or a great afternoon snack.

Dinner was a hit and nobody had a clue that they were eating an almost vegan meal.

The quorn looks and tastes just like chicken and it's texture is deceivingly similar. I think everyone thought it was a regular meal because of the 'chick'n' burgers!

Lots of compliments!

It's so nice to have chick'n without the antibiotics and harmful hormones (I think its probably worse than beef!) and it's one less fowl that has to live such a foul life.

When I became a vegetarian 13 years ago, my teenage boys were horrified if I tried to serve them any meat substitutes... Now one is a vegan and the other eats vegetarian at least half of the time! Even my husband, a died in the wool meat eater, has quit eating red meat totally and only eats chicken once or twice a month. Amazing what time can do....

that sound like quite a spead, they gotta be nuts to not enjoy food that good. The words have a negative meaning to many people. don't talk about it unless asked and stay away from the politics of it. If some body says how unhealthy it is point out the many cultures around the world that are very healthy but only consume plants. Things will be fine

I have company coming for dinner Friday and one of the guests is my brother. He doesn't even like the word vegan much less vegetarian! I'm serving Quorn Chicken burgers, vegan baked beans, coleslaw, cauliflower/broccoli with a light vegan cream sauce and Original flavor Sun chips for something crunchy.
None of these guests are even vegetarian, but I don't think they'll even notice. Oh...and for their dessert, a white raspberry filled cake.
I love to feed our friends and family vegan food without them knowing it. Muahahahahaha! (Oh, they don't know that we are almost vegan since the first of the year.)

Thank you, I am a firm believer in accommodating to everyone's eating lifestyles when they come to my home. I didn't want many choices for the ones who eat anything and her to have nothing or only one thing. I made her several things and she is always grateful. I started the 21 day kickstart today. Picked up my steel cut oatmeal w/brown sugar at Jamba Juice. I went to their website later to get the nutritional break down to add to my food journal and discovered milk is added to the brown sugar.

I got really sick again today. I've been having problems with my digestive system off and on for a while. I started the 21 Day Kickstart yesterday and was wondering what I kind of broth I could have. Lo and behold, I had a container of Seitenbacher Vegetarian Vegetable Broth and Seasoning in my cupboard. It is absolutely delicious! It's GF and vegan. It will be my go-to instant broth from now on.

I cook asparagus in a stainless steel skillet half filled with water. You need to cut the woody part of the stem off before cooking the spears. If you hold a spear in both hands, you can snap the stem end off. Use that as a measuring stem and cut the others the same length. Cook in boiling water until just fork-tender; don't overcook. I like to squeeze lemon juice over mine when I serve it or put some parmesan cheese on it using a vegetable peeler so I get nice strips.

I prefer baby spinach to mature spinach. It has a milder flavor, and you don't have to deal with the stems because they're tender. It's delicious lightly sauted with shallot or red onion, mushrooms, garlic, and a bit of fresh tomato with a poached egg on top.

I'm planning on making some vegetable gratin for my brother's birthday party. I'll use broccoli, carrots, cauliflower, garlic and pepper and unrefined salt in the non dairy sauce.

Jesus's real name is Yahshua which means God is Salvation; many people call Him Yeshua or Y'shua which simply means Salvation. It's all good.

God's real name is YHVH in Hebrew or YHWH in Greek both man Yahweh.

I think it's awesome to know the real names of those I love.

I litely steam asparagus, or just put it in a oven safe dish, drizzle with olive oil and balsamic vinegar, a little bit of garlic and sea salt. Bake for about 6 minutes.

The spinach, I sometimes throw into smoothies raw (in the blender), or I will wilt the spinach in a fry pan with a little bit of water ot broth, then add to scrambled aggs or pasta or anything...

never hat much asparagus, how do you fix it, Laura I like spinach but the hard stems are a pain what do you do about them

I eat a tone of spinach and dark leafy greens in salald. I also like my broccoli, tomatoes and asparagus. I also enjoy red peppers, mushrooms and sprouts.
