Sorry this is quite late, but we had a fantastic lasagne primavera (white sauce), garlicy roasted brussel sprouts, fresh pear and gorgonzola salad, rolls, and for desert, bread pudding with brandy butter sauce. I am obviously not vegan, as there was lots of butter and cheese. I splurge on the holidays.
No, the casserole isn't posted in the recipe section to my knowledge. I'm a total slacker about tracking my food. It's from Dreena Burton's Eat, Drink, and Be Vegan, which has lots of great, heathy stuff in it.
I'm making mashed potatoes and sweet potatoes with white gravy, biscuit, baked butternut squash, stuffing, steamed; carrots, broccoli, cauliflower, baby peas and kale. That sounds like alot but its alot of veggies.
For Christmas Eve, we're having two different lasagnas with garlic bread. Tomorrow, we're having stuffing, mashed potatoes, sweet potato casserole, green beans, basically Thanksgiving all over again! I can't wait!
