I get picked on for this, but it totally rocks.

I make what I call "scrambled tofu". I start with a little EVOO and saute some thin sliced red potatoes. Once the potatoes are cooked through & tender, I add onion & pepper. Once these are cooked, I add mushrooms and olives. Last, I add the extra-firm tofu and my seasonings. I usually use chili powder and a dash of cayenne with a little salt. It's all scrambled up together and it is totally awesome.

I used to do an omlette every Sunday after my morning bike ride. Now I can do it guilt-free! The beauty of this recipe is that I can just kick in whatever veggies I have - tomatoes, soybeans, carrots, broccoli, cauliflower... Whatever I have works.

That is an awesome question/idea. My husband makes killer spinach/tomato/ham/cheese quiche. I like it but yet half of me doesn't. Knowing an eggless/cheeseless healthier version would rock!

How do you do a complete vegetarian omelet without using the eggs? I love to have an omelet at least once a week but not sure how to do it without eggs.
