I get picked on for this, but it totally rocks.
I make what I call "scrambled tofu". I start with a little EVOO and saute some thin sliced red potatoes. Once the potatoes are cooked through & tender, I add onion & pepper. Once these are cooked, I add mushrooms and olives. Last, I add the extra-firm tofu and my seasonings. I usually use chili powder and a dash of cayenne with a little salt. It's all scrambled up together and it is totally awesome.
I used to do an omlette every Sunday after my morning bike ride. Now I can do it guilt-free! The beauty of this recipe is that I can just kick in whatever veggies I have - tomatoes, soybeans, carrots, broccoli, cauliflower... Whatever I have works.
