Thanks for this recipe. I am a new member to this forum and I am new to vegan eating. I have been experimenting with tofu and I found a really good recipe in an old Vegetarian Times mag. You can substitute with vegan cheese if you like.

Here it is: Italian Tofu and Spinach Patties

1lb. soft Chinese-style tofu, crumbled
10oz. frozen chopped spinach thawed and squeezed dry
1/4C Parmesan/vegan cheese
1C Shredded smoked mozzarella/vegan cheese
1/4tsp. nutmeg
2 cloves garlic, mashed
1tsp. salt
1/4 tsp. black pepper
2C dry bread crumbs
3Tbs. olive oil
2C prepared marinara sauce

Mix together tofu,spinach cheeses, nutmeg, garlic, salt and pepper in medium bowl. Divide into 8 equal patties. Dip each patty in bread crumbs. In medium fry pan, heat oil. Saute patties until golden on each side, about 3 minutes per side. Serve in pool of marinara sauce. Makes 8 servings.

Per Patty with 1/4C sauce: 282cal.;13g prot.;13g total fat(3g sat. fat.); 30g carb.; 10mg chol.; 1,034mg sod.; 4g fiber. Lacto

I liked this very much with a dinner salad.

1 Tbsp. canola oil
3 onions, chopped
1 carrot, chopped
1 Tbsp. finely chopped jalapeno, if desired
3 cloves garlic, minced (or to taste)
3-4 tsp chili powder
1 tsp ground cumin
1 (28 oz.) can + 1 (14 oz.) can tomatoes, chopped with juices
1 tsp. brown sugar
2 (15 oz.) cans red kidney beans, drained and rinsed
2 packages Extra Firm Tofu, crumbled into bite-sized bits
finely grated soy cheddar cheese, and chopped scallions for garnish

In a large saucepan, heat oil over medium heat. Add onions, carrots, jalapenos, garlic, chili powder, and cumin. Saute until onions and carrots are soft, 5 to 7 minutes. Add tomatoes with juice and sugar. Cook for 5 minutes over high heat. Reduce heat to low, then stir in beans and tofu. Simmer the chili until thickened, about 15 minutes. Serve with yogurt, finely grated soy cheddar, and scallions on the side.

NOTES: Includes 13g of fiber per serving
