It's too late to tailgate at a Husker game, but this is something I will probably make for the Super Bowl:
Pickle Rolls
1 8-oz. Low Fat or Non Fat Cream Cheese
3 packages of THIN cut ham or honey ham
1 large jar of WHOLE Dill pickles

I soften the cream cheese in the microwave, so it's easily spreadable. I spread about 1-2 teaspoons of cream cheese on a slice of ham and roll it around a dried off pickle. Repeat on two more slices of ham (3 slices of ham per pickle). Chill the whole ham-rolled pickles for an hour or two, then slice into 1" slices. YUMMY. And only about 10 calories per slice!

Slow Cooker Chili

1 can (28 oz) whole tomatoes
1 medium green pepper,chopped
1 can (14 oz) chili beans, rinsed and drained
12 oz fat-free soy crumbs
chili powder
1 T. mince onions
1 T olive oil

In 4 quart slow cooker combine ingredients, cover and cook on high for 4 to 6 hours

Not exactly low calorie but lower in calories than most trail mixes. 1/2 cup = 180 calories

2 tablespoon canola oil
2 tsp soy sauce
1/2 tsp garlic powder
1/2 tsp ground ginger
2 cups Rice Chex
2 cups air-popped popcorn
1 and 1/4 cups peanuts (you can reduce amount if want to reduce calories)

Preheat oven to 325 degrees fahrenheit. Spray cookie sheet with cooking spray.

Mix oil, soy sauce, ginger and garlic powder. Add cereal, peanuts and popcorn. Stir to blend.

Bake for 15 minutes stirring occasionally. Let cool and serve.

I am copying this recipe. Thanks for sharing Suz! I don't snack during football games but I do at other times. I have a couple recipes I will posting tomorrow that are lower cal versions of favorites-a trail mix and a cheese ball.

Taco Dip

8 ounces Fat Free sour cream
8 ounces Fat Free cream cheese
1 packet dry taco seasoning

Combine the above ingredients using a mixer until well blended and creamy. Spread on to a platter or plate.
Top with finely shredded cheese, diced tomatoes, black olives or any combo of the 3. I like to put cheese down and then put diced tomatoes on the border of the plate.
Serve with tortilla chips!

This is the easiest recipe ever! And everyone absolutely loves it....I always get requests for it!
