For those on the 30 day cleanse, you know how difficult it can be at times to create 600 calorie meals that contain no processed foods, no preservatives, dairy, butter/oil. I thought it would be fun to share some recipes. Here are some of the things I prepared so far:
Grilled Chicken marinated in fresh orange juice with ginger served with mixed vegetables also cooked with OJ and ginger (added some crushed red pepper).
Salsa: fresh diced mango, pineapple, cucumber, tomato, red onion and cilantro (serve with grilled salmon). This is my favorite salsa. I'll never buy jarred salsa again.
Quinoa and black beans with sauteed scallions and garlic (used 1 Tsp olive oil but made a big batch)
