Would LOVE to get back to the west coast again on two wheels!
Couple years ago I FINALLY made it to San Diego to visit my sister (she and her family have lived out there for oh...only around 25 years or so...lol!) for the FIRST TIME! We had a blast renting bikes on Coronado Island a heading out up & down the Silver Strand...!
A coastal ride covering some serious miles out there...? YES! That would be AWESOME!

I've ridden one of them... regretfully only one and I can vouch for it being included on the list. Highway 1 in California is indeed scenic and a beautiful ride. So is Highway 12 on the Oregon coast. I've ridden from Lincoln City, Oregon south down highway 1 to just south of Bodega Bay, California. The scenery is spectacular and the ride was lots of fun. The added attraction for us was there are State campgrounds in Oregon spaced close enough together so you can camp every night, which we did, and most have a hikers/cyclists only section, so you don't have to worry about a popular camp ground filling up before you can ride there.

Upon further review... I stand (well I'm sitting actually) corrected. It's tied at five. That one down in Louisiana threw me off. And even further, I agree with Don, they ALL look like fun. I guess waiting for the plumber to show up (two hours late and counting) has soured my mood. Ride on!
Very nice, but in my opinion, a little eastern US slanted. The majority of the routes are east of the Mississippi, with only two on the West Coast. If you want miles upon miles of uncrowded highway, more wildlife than people, challenging climbs with exhilarating descents, and spectacular scenery around every bend in the road, then heed Horace Greeley and Head West Young Man. Or old man. Or any age woman. :)
