We do our own gardening and I eat as much of the parts of the veggies as I can. When I make cole slaw or cabbage soup I dice up the core. I have diced up brussel sprout leaves (leaves off the stalk), radish leaves, the green part off the onions and put them in salad. I don't know about the carrot leaves but you can google "are carrot leaves edible" to find out.
Does anyone know of a website that explains the edible parts of plants? I do my own gardening a bit and was wondering (for example) if carrot tops were edible to humans. Thanks in advance for any help.
