I found this recipe for the bundt cake many years ago and decided to make them for the first time last night as cupcakes. Pretty good for low cal and no fat! :)
Angel food cake mix from the box 1 (20 oz) can of crushed pineapples WITH it's juice
Preheat oven to 325F and pam cupcake trays.
In mixer whip both ingredients for about 3 minutes.
Spoon mixture into cups 2/3rd full.
Bake for 20 until light brown on top.
Let cool and serve with cool whip if you like.

-I am not a huge fan of fruit in dessert like pies and what nots (I love pies,etc but I scrap the fruit out!) so the little chunks of pineapples bugged me a bit. So next time, I will only use the liquid in the batter and serve the cupcakes with pineapples on the side of it!
-I think I will try it with canned peaches another time.
-I wasn't searching but I am sure you can use the "light" version of the fruits, thus lowering the calories.
-For decorative purposes maybe you can spoon a little pineapple tidbits (bigger than crushed, smaller than chunks) into the cups first then add the batter (with no fruit) on top and bake. When done it will look like pineapple upside down mine-cakes!
-Could probably use pie filling as well.
