Ann, I usually have an abundance of vegetables in my freezer, but when I looked this week I could only find two bags and they were mixed vegetables with lots of peas and corn. One package has asparagus and the other has green beans. I did find a couple package of chopped spinach. I didn't get them out and into the house because I still have fresh spinach in the frig. I am absolutely amazed that I haven't more frozen veggies. I never allow myself to get so low. I guess that since Carol won't eat the food I prepare, I just haven't worried about what is in the freezer. Next month I will try to remedy the situation.
I am so grateful that the local spring vegetables will be here shortly. I am looking forward to them. I love asparagus and that will very shortly be here. I want to get some fresh beets and make a fermented dish I think I posted last week. I need to get some more canning jars to put the Kvass in. That is the name of the dish.
Today, I added penne pasta and vegetables to the chicken I cooked day before yesterday. Gloria boned it out for me so I just had to heat it back up and it was ready for whatever additions I chose to give it. I took half of the broth and meat out of the pan and set them aside so that I can make pot pies with them. I need to mix up the pie crust except the water tonight and put it in the freezer so that it will be cold enough to add tap water. I don't have any ice cubes.
Good Afternoon. Seems I had the TV on all morning while I was knitting. I generally don't watch TV in the morning but got hooked on a news program.
Nina, I think we all know about stress and ice cream. Not too bad if your portion is small. How about some of the Skinny Cow Sandwiches or the Truffle Bars. The bars are so good and only 100 calories.
Judy, do you keep stocked up with frozen vegetables? I always have those in the freezer. The mixed vegetables (with out lima beans), French Style Green Beans, corn and a peas and carrot mix. They come in handy. I don't care for frozen broccoli or cauliflower except for making a soup. Frozen string green beans aren't a favorite either. I also have cooked Butternut squash in the freezer and fresh carrots do keep quite a while. So does cabbage. I can always give DH some instant mashed potatoes and a small amount for me.
Right now I have 2 bananas that need to either be thrown out or used. I had a frozen box of banana bread that I wasn't too fond of with the artifical banana flavor. On the box it suggested an add on might be a banana, so I will try that. I like to have some sweet bread in the freezer that I can take with cream cheese on the days I have chemo for a snack.
I have had a sore arm for the last 4 or 5 days and it finally dawned on me that is the arm I had the shot in last Wed. to bring my white cell count up. I've had the shots before and never had a sore arm but that last shot even hurt going in.
Patty, your wreath of hats is so pretty. Are the loom hats quicker to make than if you knit or crochet them? At first look I thought they were socks.
I had planned to take Gidget to the groomer's today, but I overslept and when I called over there no one answered. So she'll have to wait until next week. Tomorrow is TOPS but I don't have enough gasoline to get there.
I am getting anxious because it has been too long since I weighed in. I don't have a scale here. (Carol broke my scale somehow, I don't have a clue how) Anyway, I am afraid I have been gaining weight again. I am trying to watch what I eat, but as usual during the end of the month getting vegetables in my diet is difficult.
How do you manage to get veggies throughout the month when you only get paid once a month?
There is watery sunshine today. I think we have high clouds. The sun should burn those off soon. I haven't gone outdoors yet so I am not sure what is going on our there.
There isn't much happening here today. I have a pot of chicken to take care of . I was glad to see a recipe for topless pot pie this morning. That will help to use some of the chicken. I have been hungry for penne pasta and am looking for ways to incorportate some into my menu. I have in the freezer two packages of ground round that is precooked and rinsed. I can use that or some of the chicken. I don't have any fresh fish and I don't thing that would go very well with the pasta anyway. Give me some ideas please.
Gidget is demanding some attention so I am going to deal with her for a while. I'll see you all later.
