I just made that strawberry salad too. Should be wonderful with supper.
I did not have diet 7 up, so used died mountain dew instead. Should be fine...

Ann, before I forget, to prevent the filling from sinking into the crust of a pie, brush the crust with egg white and put it in the oven as 350 degrees for a few minutes. then pour in the filling.

My copy of the Diabetic cookbook is here so I can start trying things out. I am excited.

I;m using up some strawberries and made Seventh Heaven Strawberry Salad page 137.
Jello, 7 UP, pecans, crushed pineapple and strawberries. Oh and celery.

Diabetic's Healthy Exchange Cookbook pg. 98 or Healthy Exchanges Food Newsletter December 1993, p. 7. This was excellent. I really liked the corn, and I really liked the taste of the chex with this. I would have never thought of that. But, it was definitely tasty! 5 stars.

Savory Salads
Beet-Potato Salad-

Diabetic's Healthy Exchange Cookbook pg. 119 or Healthy Exchanges Food Newsletter December 1993, pg. 5. I thought this was excellent. I really loved the huge portions, it was filling and yummy. This is more like a "new potato" salad though, I highly suggest using red, or new potatoes, rather then a russet or starchier potato for it. All 5 stars.

Diabetic's Healthy Exchanges Cookbook pg. 182 or Healthy Exchanges Food Newsletter December 1993, pg. 5. This was very good, particularly for the calories. I would definitely have this again. 5 stars.

Diabetic's Healthy Exchanges Cookbook pg. 242 or Healthy Exchanges Food Newsletter May 1993, pg. 6. I liked this a lot too. Especially for the calories. I used chocolate graham crackers, and it was like German chocolate dessert. I really enjoyed it. 5 stars.


Eggnog-

The Diabetic's Healthy Exchanges Cookbook, pg. 283 or Healthy Exchanges Food Newsletter December 1993, pg. 1. This was really good. I suggest the thinner version. But, it definitely cured my eggnog craving. It was amazingly authentic. It earns 5 stars!

Here's a couple of things I've made from this cookbook and graded them.

Pg. 25 Butterscotch Pecan Parfait excellent

Pg. 89 Pumpkin Pecan Crumble Pie just O K. The filling soaked into the crust.

Pg. 37 New "Old Fashioned Rice Pudding" excellent.

I do have this cookbook. I will have to look through it to see if it fits into my gluten-free lifestyle. If it does, I will make some things from it.

So Girls,
We are starting the Diabetic Cookbook for the month of March.
Come on, let's all make things from this cookbook, and let each other know how it turned out.

I need to get that cookbook off the shelf and start looking inside...So many new recipes.

It was seeing this cookbook at a friends house, that introduced me to JoAnna Lund...cool huh
