Gluten Free Peanut Butter cookies
1 cup sugar
1 cup peanut butter
1 tsp. vanilla extract
1/2 cup crushed peanuts
Preheat oven to 325 degrees
In a large mixing bowl, beat sugar, p.b.,
egg and vanilla untill well blended
Form cookies using a small scoop, place
on a parchment lined cookie sheet.
Flatten each cookie and make a criss cross
pattern with fork tines. Sprinkle with
Bake for 10 - 12 minutes or until lightly browned.
Cool for 2 min. on baking sheet. Transfer to wire
rack to cool completelyl
Per serving: 110 cal. 11g carbs, 4g protein, 7g fat,
10mg chol, 50 mg sodium, 1g fiber
Ann's notes. This recipe was from the Sunday Parade
You don't need 1/2 cup of nuts. I got about 36 cookies.
I rolled them in my hands and dipped the top in the
finely chopped nuts and then on the pan I used the fork.
That worked better for me than sprinkling nuts on top.
