Jan-I have made the Tex Mex Fiesta Casserole. I have not tried to freeze it. Since I make the 8X8 size we end up eating it as left overs. I would imagine it is the ice crystals too. If I was going to freeze it I would use a little less of some liquid.
Patty I will be right over for some of that cherry jam. It sounds so good to eat on a biscuit.
Glenna-I was just reading on my computer about the high temps and humidity. It sounds awful. Seems like everyone here in Calif have air conditioning. I have noticed that a lot of people are sitting out side when it is hot. I think the economy has people not turning on the air conditioning to save money. My son-in-law has a good job, so when it is too hot they turn theirs on. They do open the windows in morning and evening. So I am keeping cool.

Patty, That must have been eerie to have the lights go out and not know when they might come back on. Good thing it wasn't long. We CAN do this (get below 200). We'll just keep on trying and do our best.
Glenna, Thanks for the ideas. The best of the meals I froze ahead were the meats you finished up after they thawed. Like lots of meatballs that could be used in portions for spagetti or meatball sandwiches or salisbury steaks that you just add a can of cream of mushroom soup for "gravy".

Jan, Glad Bruce got some relief for his back. I think frozen dinners sometimes do have a tendency to be runny. Probably the ice crystals. Don't know, that's just my guess. I don't really know how to eliminate it either. I do know if you freeze mashed potatoes, it is best not to thaw them before heating. Get the oven or skillet really, really hot and pop them in.

It was sunny and warm here today. Supposed to have terrible humidity the last of the week and temps in the 90's. Not looking forward to that!
It was 95 here yesterday and humid...then during the night, a bad thunderstorm for a couple of hours. I got up and watched tv during the storm, then went right back to sleep.
Went to lunch.
picked up Mom at the house. Helped her put a bra on,(she has not been wanting to wear one lately) oh my, and we went to the store to shop and visit with cousins.
While we were there in the lunch room, the power went off. Man, was it ever black in there. I grabbed Mom's hand, to make sure that she didnt' try to get up, and about 2 minutes later the power came back on. It was pitch black. Could not see the cousins at the table across from me.
Hubby says I need to use up those cherries, so we can have room in the freezer. I guess another marathon jam making is in the works. I need to find more pint jars. Maybe I could use quarts. I think it would take about 5 to 7 quart jars. We shall see.
Going to watch the Closer and Rizzoli and Isles tonight. Then sleepy time.
I have gained 3 pounds since my last weigh in. bah...now I have over 8 pounds to get below 200. I am mad. Can't figure out why I was so hungry last month.
Oh well. onward and downward on the scales.

Good afternoon ladies,
It's a sunny day here for a change! Weatherbug says it's 67 degrees and might get up to 70. I walked out in the garden and, yep, the weeds are coming back. Like death and taxes.
This morning I took Bruce to the chiropractor and he got some good relief for his back pain. He needs to keep up with his exercises. When things feel okay, we forget.
I am relieved to say I'm back on track with eating properly. I had a difficult few days and don't expect to see a loss this week. While I was waiting in the chiropractor's office I looked at my weight loss tracker to see what the last year looks like. Not as bad as I thought. Not a steady loss but I'm not losing much ground. I want to get on a roll again. In TOPS if you lose or stay the same, it is recorded in black ink. If you gain it's in red ink. I want to see more of that black pen!
I have a question: A couple of weeks ago I made a double batch of Tex Mex Fiesta Casserole and froze one. I thawed and then reheated it but it was a bit runny. Is this pretty typical of frozen meals?
