Ladies....

How did everyones day go?
I got in 2 small walks today..will try for 2 longer ones tomorrow. I have a bad back and when it acts up, it is hard to walk to far at one time. Was up to 3 miles a few months ago, but took a bad fall and am still working my way back up to that again. Also need to get some stretching and strength training in...this getting healthy takes a lot of time!!

As for the weather here on the coast, it was a beautiful sunny day today. Rain, hail and thunder earlier this week, but great today...even had a nice campfire tonight. When you live in a motorhome the outside becomes extra living space, so having nice weather helps a lot.

The floors we are having put in (on 11/08) are 12"x12" Tercel stone look tiles in warm shades of beige, rust & light brown. The slides are going to be a complimentary shade of light brown and the entry steps are a "hammered" shade of beige with the tile on the sides. Hope it all turns out as good as I have it in my mind!!

Ann...I know what you mean about cookbooks. When we sold the house I put 47 of them in the garage sales we had and I have about 75 in our storage unit. Of those I have left 15 are JoAnna Lund. Oh, I forgot...I have about 30 (all sizes) in the motorhome. I read recipes and cookbooks like other people read novels.

Ann, I have heard of the Eat What You Like book, but have soooooo many cookbooks here. I'm going to getting rid of a bunch while I'm recuperating. I will put the few recipes I like from the books I don't use often up on my blog, and then Freecycle the books.

Thanks for the clarification Patty. The terms always confuse me. Yes I am following more of a vegetarian, celiac type diet. Dairy free, though I'll eat the occasional egg.

I'm trying hard with the eating. The transition has been easier than I would have imagined when I decided to do it.

Vegan is fruits, veggies, whole grains, nuts seeds and beans. nothing else. No dairy, no meat, no eggs.

Good evening ladies,

We were treated to an absolutely gorgeous, sunny day. It was cool so DH & I bundled up and went out for a walk on the riverwalk. Pretty soon I had to take my fleece jacket and scarf off. It felt so good to be walking outside again.

We just saw in the local newspaper one of our neighbors died on Wednesday. We didn't have a clue. Both the man and his wife used to work with DH. Their adult daughter lives with them.

Today we had our usual big bowl of oatmeal for breakfast, lunch was chicken enchiladas and dinner is still a mystery.

Louise, I hope you got some sleep but not too much so that you can sleep tonight. At the VA workshop we went to yesterday one of the topics was better breathing - using deep, controlled breaths (in through nose, purse lips and slowly exhale) for relaxation, to manage pain, etc.

Judy, I hope you had a good walk today. I'm curious about what kind of flooring you got, too.

Patty, Sounds like that pill didn't agree with you. I hope all is well with you this weekend.

Paulissa, I always understood that vegan means plant foods only. DH's past employer was 7th Day Adventist and ate vegan - said whatever you eat should not have eyes or a mother. Then there's variations on vegetarian. Your diet sounds healthy.

Shar, you are a nice Mom to clean house for your son. I know exactly what you mean about your idea of clean and DS's aren't the same. Wow, that's a lot for cute pumpkin cupcakes. They'd have to taste darned good!

Ann, That is what we do for birthdays - the birthday person gets to choose. Thankfully no one in our family likes sushi or something like that. I have not heard of that book but I'll google it when I finish up here.

My stomach is growling - time to solve the mystery.

Here is the recipe that I use. It is wonderful every time.

Cheese and Beef-like Lasagna

9 cooked lasagne noodles(I don't cook mine ahead of time, just cook it all together in the oven)

2 c. any vegetarian meat, ground)I use Morningstar Farms beef crumbles)
1 jar vegan spaghetti sauce
1 recipe of tofu cheese filling
1 recipe of Healthy Nacho cheese

Tofu cheese filling:
1 pkg tofu, firm
1 TB. lemon juice
2 tsp. turbinado sugar
1 tsp. sea salt
2 tsp. basil
1/2 tsp. garlic powder
1 tsp. onion powder
2 TB. nutritional yeast

Healthy Nacho Cheese
1/4 cup raw cashews
1 red pepper
1 TB. lemon juice
3 TB. nutritional yeast
1 tsp. onion powder
1/2 tsp. garlic powder
1/4 cup cornstarch
1 1/4 tsp. sea salt
2 1/2 cup water

Prepare the Tofu cheese filling:
mash the tofu with a potato masher, then add remaining ingredients

Prepare the Healthy Nacho Cheese:
Put 1 1/2 cup water in a saucepan on high to bring to a boil
Put rest of ingredients for the healthy Nacho cheese
into a blender. Blend till smooth. Add to the water on the stove, and stir until thickened. (This will be like a thick white sauce.)

Lasagna

Make the layers in a 9x13 pan.
spray the pan
start with a thin layer of spaghetti sauce
then add 3 lasagna noodles
top with half the tofu cheese filling
then more sauce, and the beef crumbles
cheese sauce
then another layer of noodles,
tofu cheese filling
sauce
cheese sauce
another layer of noodles,
top with rest of spaghetti sauce
top with rest of cheese sauce

bake at 350 degrees for 1 hour. Let set 10 min before serving.

Patty, yes it sounds like the bp med is too strong for you. My mentor had an issue with his bp meds for a while and he was passing out (thankfully not while driving). It took some time to get the right strength for him but his is fine now. I hope you can get yours regulated soon.

Your lasagna sounds soooo good. Is there a recipe? I'd love to try it.

Yep my crockpots (I have a 4 and 5 qt) get used 3-4 times a week because things are usually nuts. It won't be so bad with me being home for the next several weeks but will still do the crockpot meals to make things easy for David since he will be working and helping me too.

Thanks for the kind words on the eating. I just reached the point where I felt as though the bad eating and lack of eating was killing me. My BP and cholesterol were borderline high at my last physical and while the blood sugars were normal, I feared that diabetes was right around the corner. I decided that there is no food that taste good enough for me to die for it and began changing everything. Upon doing some research on the Mediterranean and anti-flammatory,candida, gluten free (same basic principles for all of these but some are a bit more clean eating (no preservatives, pesticides, processed foods) than others) I discovered that since endo is an inflammatory disease and can depress the immune system and cause IBS (irritable bowel) and other things such as rhuematoid arthritis, I decided that eliminating the refined sugars, flours, dairy and soy made sense. It may help with staving those conditions and it is healthier overall. I am eating mostly a vegan diet - eggs, fish, chicken and very little red meat. Lots of fresh fruits and veggies, experimenting with different grains and enjoying the energy I have. This in spite of the pelvic pain so I can only imagine how much better I'll feel after surgery and recovery.

Afternoon Girls,
I almost passed out again this afternoon. Luckily hubby had gotten home. He is going to think I am "swooning" for him.
He said to call the dr, and go off that pill. Well, dr. is not in, but I am going off the pill. ridiculous, all this swooning...thankfully nothing happened while I was driving. I did check my sugar, it was 131. Yes, too high, but not high enough to make me pass out.

so off the pill I go. we shall see what it does to my bp

vegan lasagna for supper with a salad.
tofu and spices for the ricotta
cashews, spices, nut. yeast, red pepper and water for the cheese sauce
burger crumbles for the beef.

It is so good

Good Afternoon. I've been looking at a restaurant menu to see what would be safe for me to have for supper tonight. They have some selections under 600 calories. Can you beat that!!!! None looked very appealing. All the fish items were either deep fried or had some marinate that sounded spicy to me and even their rice said spicy. I don't like spicy as it generally is hot. I guess I'll stick with a salad even if it isn't the best choice. Apple, Spiced Pecan, Chicken something sounded pretty good with a raspbery vinegrette dressing. They didn't list any salads on the under 600 calorie items. Today is DD birthday and this is where her brother wanted to take her. After we eat DH and I will come home and leave the three of them to the restaurant video rooms. That means LOUD and kids running around. To me it also mean expensive. Maybe some of you might have heard of Dave & Buster's restaurant. A busy place but when we've been there before the food was very good.

I told DD next year we have a new rule for birthdays. The birthday person gets to choose where he wants to eat. For some reason DS always seems to say where he wants to go.

Louise, I hope you were able to go back to bed for some sleep. My DIL is a very poor sleeper. They don't go to bed until after midnight and then don't get up until late morning. Drives us crazy when we visit them. I don't go to bed early but am up at a reasonable time.

Judy, how does the new flooring look? Was it carpet or something else? Is it cold where you are now?

Does anyone have the cook book Eat What You Love by Marlene Koch. I've been hearing about it on the Weight Watcher web site. I was going to see if Costco was selling it. Does one ever have enough cookbooks. I counted my JoAnna ones the other day and I have 40 counting the thin ones.

It is very nice outside. Ooops I have clothes in the dryer I must get out before they wrinkle.

Happy Friday....

Louise..so sorry you are having sleep problems. That's not fun. I am fortunate enough to sleep like a log, but I have a cousin who always has had a problem and she finally started doing all the quiet chores she could, so as not to disturb her DH. So, she would iron, do laundry, plan menus, do correspondence, etc., etc. This wouldn't work if you had a job to go to though. The Doc told her the more she worried about it, the harder it would be to get switched back to a regular schedule. By doing stuff in the middle of the night, she could catch a few extra winks and sleep in a little in the morning and not worry about what wasn't getting done. Hope you can get it squared away soon.

Shar...know what you mean about our overweight society. I hate those food programs where they try to eat their way through a 7# burrito or some other such dumb thing. What is that all about?
We don't have to worry about Trick or Treaters as the campground we're at has very few campers now. They will have a party at the clubhouse though..we may go check that out.
I envy you being with little ones...I used to do that too. I had our Granddaughter(5 days a week) from 2 weeks old until she started school. Such fun we had..she's a real sweetie.

Paulissa...I have a Fix it & Forget it cookbook too. I use it a lot. My crockpot is my "go to" appliance in the MH. Frees me up to get out and do other things. You are eating very well..I need to do better myself!

Well I have to do my walk now and then come back and wade my way through the voters pamphlet and get my ballot in the mail tomorrow. Will be glad when this election is over!

My house is going to be the non-popular house that gives out pencils, pads of paper, crayons, etc. Maybe some fruit rollups if I get to the store later. I have a midterm to study for so I'm not sure how much I will get out today.

Good morning Louise and all,

It is a sunny, crisp fall day here. Gorgeous outside and I hope to get a little work done later after I have tea with a friend. She has prepared a little care package that she wants me to have before the surgery. Yippee!

Yep I won't overdo it. When I had the ovary removed, they made me walk the floor that I was on every time I got up to go to the bathroom. A couple of laps at a time. No hardcore walking. We'll see what they see this time but I imagine that it will be much the same.

I have had my breakfast - oatmeal w/ almond milk and cantaloupe.

Lunch will be a turkey sandwich with hummus and carrot and celery sticks w/ greek yogurt. I am also making a peach crunch salad. It is a Joanna recipe from the Heart Smart book. It sounded good.

Dinner is Apple Onion pot roast from the diabetic Fix It and Forget It cookbook. Not a Joanna book, but I haven't had a bad recipe out of it yet. I'm debating over potatoes with it or rice, barley, quinoa or some other grain. We'll see. Also some green veggies so maybe some spinach or broccoli.

Hi Louise and all,

You certainly were the early bird today Louise. I hope you got to go back to bed and get some sleep. My hub has been having trouble for the past couple of weeks. I tell him when he can't sleep to get up and maybe turn on tv but he never does, just tosses and turns. I usually don't have any problem.
Heather I am so glad you are back. I like reading about what you are making. My you cook for a lot.
Not sure what I am doing for the weekend. I think DH and DS are going to the lake tomorrow and take the boat out of the water. We still have to winterize the trailor. DS would like me to clean his house for him as he is having a get together next Sat. He hates cleaning and his way and my way are two different ways! So I may clean his house tomorrow while they are away. It's just a 1 bedroom house and is our rental which is just down the road from us.
I was going through the grocery ad today from Krogers. And I thought to myself no wonder we are an over weight society. There are one page was nothing but ads for donuts, brownies, a huge cho chip cookies with halloween frosting all over it, cupcakes and so on. It did look so good I'll admit but my gosh, it's a shame. They did have something cute which was a dozen cupcakes formed in a pumpkin shape, but for $15! I am giving out fruit snacks to the little ones I watch. How about the rest of you? We have a candy shop not far from us advertising sugarfree carmel apples. I would like to try those out.
Well I have been here long enough, got to get back to the little ones. I hope you all have a great Fri.

Good Friday Monring Everyone! It is 2:59a.m. her in
Arizona. I could not get to sleep at all so I thought I would come and do an early post. Once in a while I cannot sleep. I am not sure why but tonight is one of those nights. I am hoping that a little later after I take my medications I will get some sleep in the morning. The only thing is I don't
want to sleep all day because then I will not get any
sleep in the night again. Does anyone go through this? Or is it just me? Well, I have no idea what time of day it will be because it is still dark outside. I think though it will be sunny. I don't think there is to be any rain. I know it is suppose to be warm but not hot. We still have not turned off
our air conditioning. Of course, we don't have it low at night. I want to do some more cleaning today.
Housework never seems to get done. Then I want to took some healthy meals to have for the weekend. I cannot remember what everyone posted so please forgive me for not commenting on them. I will go back and read them when my brain is functioning better. I have remembered some. Patty, how is your blood sugar? How are you feeling? Glenna, I am glad you are recovering nicely but please do not overdo. Paulissa, walking will help get you in shape
for your surgery. However, I know they will get you
up walking after your surgery. Please don't try to do it right after you go back to your room. I did--I insisted and I over did. Jan, I am so happy Quinn got the new job. How is Troy feeling? How is your husband feeling? Ann, do you have anymore trips planned? Cindy, how is your job going? Sarah, where are you? I get concerned when you are not posting? Judy, where are you and your husband traveling to? Shar, I think going to the lake sounds like fun. Heather, how did your girls take the move? If I left anyone out, please forgive me.

I have to take my medications. Then I am going to try getting more sleep but not a lot as I don't want
