I added the liquid from the can of beans, then an extra can of water. The tomatoes will cook down, I was thinking, and add lots of liquid. I think most of the veggies will.
I just cut up the veggies however I wanted. Celery, sliced, carrots sliced, beans, cut up about 1 inch length, onions, large diced, crookneck squash, quartered lengthwise, then sliced, the grape tomatoes, cut in half, the large tomatoes into chunks with 8 pieces per tomato. I think that is all. oh, the cabbage, that was quartered, then sliced. Hope this helps.
I just found a 1 1/2 cups of pinto beans in the freezer, so I popped them in the crockpot too. Also added 2 TB. turbinado sugar(raw sugar) to offset the acid from the tomatoes. lots of liquid in there now. It smells yummy
