Gee, it's easier for me to say what vegetables I don't like and that is parsnips and turnip. I really don't have any favorites. I do love asparagus fixed just the way Patty likes it, in a cream sauce on toast.
Last week the neighbors gave us a good size zucchini that I haven't used yet. Well, yesterday they brought over one that is at least 18 inches long. Now I have about 6 of JoAnn's cookbook open to pages of zucchini recipes on my sewing desk. I think we will be eating something different all week.
Jan, I'm anxious to hear how you like the long beans. I've looked at them forever but had no idea how to cook them. I asked one Oriental lady one time how she cooked them and she did say stir fry.
I too like all veggies. I enjoy the ones you girls have mentioned. But no one mentioned carrots, or asparagus. My favorite way to have asparagus is to make a white sauce. Cook the asparagus, put it in the white sauce, and serve it over whole wheat toast with butter on the toast. oh my, so yummy. This is one of my favorite breakfasts.
If I could only have 1 veggie, I think it would be tomatoes. There are so many things you can do with them, salads, in spaghetti sauces adn goulosh, tacos and tamale pies, so many things. So I guess tomatoes would be my favorite. Patty
I think the only one I don't like is brussel sprouts, they are bit to bitter for me. I have tried to like them, but just don't. they sure are cute though! I love cabbage and they little like little cabbages so I so want to like them! lol haha
Any way, my favorite is zucchini. I like it in every form! lol I like it fried a LOT! lol
But, I think in JoAnna's zucchini lasagna it's fantastic. And we all like Richard Simmons top of the stove casserole, with the star ingredient in our family the zucchini, we of course at least triple if not more the amount of zucchini Richard calls for. lol
I love most vegetables. I love fresh tomatoes and cucumber. Corn on the cob, beets, all kinds of greens. I want to get some smoked turkey sausage and cook it with green beans. At the Sunday Market I got some of those really long Vietnamese green beans. They had samples of them sauted with a little olive oil and garlic. Yum! That's what I will be fixing tonight.

I love all vegetables except for beets and spinach (I am allergic) so it is not that I don't like them they don't like me! Anyway, if I really had to choose a favorite veggie it would be mushrooms! I love them cooked! I love them raw! I love them in stir-fry's! I love them over steak! I love them over chiken! I love them in salads! I just love mushrooms! I also love fresh tomatoes. I honestly love all veggies.
My favorites are the same as Glenna's, corn on the cob and tomatoes, only I do like butter and salt on the corn! I like tomatoes in all forms, but I think my favorite is in tomato and cheese sandwiches (sliced thick with sharp cheddar and mayonaise on whole grain bread).

Fresh corn on the cob and garden-fresh tomatoes. I eagerly await each one each year!! We had our first mess of fresh corn last evening. And we've had tomatoes two or three times.
I like the green beans, too. I like to add new red potatoes and squash. Anything fresh from the garden is good!!
I have always like corn with nothing added----no salt, pepper or butter. I'd just gnaw it off the cob. When I was just a kid my grandpa asked if I didn't want butter, salt, and pepper. So I put it on there to make him happy. I always remember after taking that first bite him asking, "Now isn't that better?" When we weren't there visiting, I always just ate it plain!!! Funny how we remember things from our childhood.
It is sunny here, so my veggies should keep growing!!

I would have to say fresh grean beans, I like them with onion also and red potatos, but I also cook them with smoked sausage. I love that meal. On the other hand I also love fresh corn on the cob. Of course I would love this as it's high in sugar. Gotta love those tomatos too!!! But anyway green beans would be my first pick.
