Good Morning Jan, Patty, Heather and all who will follow. September was a pretty hot month here. However, I made changes or went back to eating my six mini meals and trying to exercise daily. I did get out my Leslie Sansone's DVD's and worked on them. That way I was not always dancing to my CD's. I needed a little change of pace. Well, everyone, please have a WONDERFUL TUESDAY! GOD BLESS! I made Little League Meat and Potatoes from the Kid book yesterday and it was GREAT! It's for sure a keeper. Husband had 2 servings!
I made a lot of changes to it. (not big changes though).
1. I added 1 to 1 1/2 cups of browned onions, and some watkins garlic.
2. I used 2 cups instead of 1 cup of salsa.
3. I used Cream of Chicken, instead of Cream of Mushroom soup. My husband and I both prefer the color and flavor of Cream of Chicken, in cheesy casserole type dishes.
4. We mixed the cheese into the recipe, instead of only on top. We both wanted cheesy flavor through out the casserole and not just on top.
Even though the recipe of course called for frozen, I for sure used frozen. I have used my own shredded in the past, and I can tell you from experience, if you used your own shredded for this recipe it would of been a starchy gluey mess. But, because of using the frozen it tasted like a texmex, meaty scalloped potato casserole.
I give it 5 plus stars, and will go into my regular menu rotation! I do need to come up with a dessert, and side for it though. However, I'm thinking the coleslaw and cake would be fine! I just didn't have all those ingredients at home.
Two more days of September. Fall has arrived here. Yesterday I made Becky's Prize-Winning Banana Bread (Baking With Splenda) and Chicken Almond Salad - not sure which book that came from. That will be a yummy lunch.
DH and I are going to move a desk out of the computer room into the living room and a small bookcase from the living room into the computer room. Phase one of moving the furniture.
