Just got home. We have been gone all day. We went about 2 hours away to see my dear friend. They have a cabin about 2 hours away from us, and 3 1/2 hours from their home. It was so nice to see her and her hubby. We are so much alike, and like the same things.
Just had a special time.
Your meal planning sounds good.

I'm silly I start with the dessert, then work my way around that! lol

When I first started I just put together what ever would fit calorie wise. (I like my calories around 450 a meal, give or take 10 calories).

Once I got enough books/newsletters I tried harder to put things together that others thought would go well together. (even though my calorie way really wasn't bad.....but it was kind of embarrassing to tell people what I had made, and see their faces.......sure I had cabbage and tiramisu! lol hahahaha). So I just worked at it, and with so many recipes of Jo's it started to get easier and easier.

I want to make mammy's corn bread again soon, but I have never made it with more then the amount of splenda called for, and I like a "sweet" corn bread.......has any one here made it with 1/2 to 3/4 of a cup of splenda before? I am going to try it when I make it again.

I've been busy with homework. Trying to keep the -ectomy's and otomy's straight at this age is a chore. One week left of this module, then it's crunch time - putting everything that we have learned in the last 9 months and prepare for the national certification.

I too have problems putting together meals - JoAnna's Friends and Family Cookbook has a lot of good ideas. Sometime she would put together menus in the back of her books.

Well, I had better call it a night, the head is starting to fall forward.

I got in a rut too, that's why those one pot dishes and casseroles come in handy. I make them up in the morning, put it in the fridge, then bake them in the evening. make the dessert early too and those should be good for two meals -only make one dessert every other day that way. add a simple veg while the baking is cooking in the microwave and its done. for skillet meals, I prep the chopping early in the day and use cool whip containers to hold them in the frige as well then those meals are a snap. but if you want to do the dishes, come on over! I'd love to have you! BTW, I don't to chickpeas (garbonzos) either. I can't even do hummus. we'd get along fine!

I had hoped that it would be worth a try. If he isn't stable yet better pass it up. She was stable when we started and it took several years to attain that status again. She had stabilized several years ago and then had to have some heart surgery to remove an aneurysm and replace a faulty valve. She quickly returned to stability and has had no problems since. emoticon

Randella, you sure do a lot more cooking that I do. Can I come live with you, I'm tired of cooking. I even have a human dish washer.

Judy, my DH has been on coumadin for over 10 years and has checks every 2 - 3 weeks. He is checked with a special diagnostic dept. We've had other friends that have been a lot more stable than he is on coumadin.

I make coffee cakes and muffins almost every Saturday so I can say I've tried a few, or more. :-) I'm away from my notes, but I will post my faves soon. For ideas, go to Judy's favorites site and read the reviews of the books, Fresh From the Hearth, Diabetic Desserts, and Dessert Every Night. in those you can read reviews of coffee cakes there.

meal planning is getting easier for me. I usually look in the freezer to see what needs to be cooked soon, I take into account what we had recently and switch it up a bit, then when I have my meat decided I then take into account if we've had something ethic and switch that around. say if I need to cook chicken and we just had Mexican, I'll look through to find something Italian maybe. I try to cook some kind of fish on Friday's because we need to eat more fish. last Friday we had salmond patties from Jo's Spice cookbooklet. Yesterday, I saw I needed to use the cabbage in the refridgerator and I made Busy Day Cabbage "Rolls" (Jan '97) and made Round-Up Time Spice Cake from Baking with Splenda, which is a tomato soup cake and both were very good. the spice cake reminded me of something for autumn time. I try to make a more comfort type dinner on Sundays like a chicken and dumplings, etc. If I am making a Mexican meal, I'll try to make a mexican dessert -something chocolate will work too. Italian meals, Italian type dessert and so on. tonight I'm making Italian pepper steak from Jan '97 and having "Mounds Bar" pie from Jan '97 also.

I also should mention that with so many JoAnna recipes I almost always am cooking something I haven't made of hers before. I do repeat some faves when I just don't know what to cook or pressed for time. the One Pot Favorites has been used a lot lately as its just easier for me to make casseroles this time of year. do try the microwave lasagna recipe, its a 5 star and you don't cook the noodles first. start to finish in the microwave! I upgraded my microwave and mine got done sooner than usual, about 8 mins.

Ann, My roommate is taking Coumadin and has been all her adult life, but I feed her all kinds of green veggies, both raw and cooked. When we started living in the same house her doctors started raising her dose each month until she stabilized. Now she is back down to where she used to be, but is still eating plenty of greens and salads. She is a lot healthier than she used to be too. Talk with your husbands doctors again and see if you can't increase his greens over a period of time without endangering him.

I'm here even if it is almost supper time. I don't get moving very fast in the morning between my walking with Leslie (twice), reading the paper and puttering. I had to go pick up my new glasses and then went to Penney's at the mall. I've wanted to go there for quite a while but just couldn't drag myself in that direction. Then I went to Costco, the library and home. I wasn't very successful at the library. I was hoping they would have the TV show Army Wives the first season. They don't. I guess I'll have to buy it. I've looked on line and WalMart seems to have the best price. I just started watching the 3rd season this month and really like the show.

Sarah, I'm not too fond of chick peas either. It's the grainy thing. I have never made one of JoAnna's coffee cakes or plain cakes. I know who would eat the most so just pass those recipes by.

Yes, I sometimes have a terrible time putting meals together because DH takes blood thinners and isn't suppose to eat green vegetables. They work against the blood thinning meds. Even cabbage and cauliflower are bad. I do give him some but in moderations. Every once in a while his lab test come back all out of whack. If it's not high in carbs it green. Today I got some good looking tomatoes at Costco.

Hi everyone!

So where is everyone? Are ya'll sitting on your porches sipping iced tea? Wish we could!

I have been debating on cooking. I want to make a coffeecake or cake of Joanna's using RF Bisquick...any ideas? I want to try something different, I have basic ingredients on hand but just can't seem to find one that grabs me.

Ann I was thinking on the 3 bean salad recipe, do you like chickpeas? They would work and are pretty bland tasting. At least they are to me.

I can't recall ever seeing wax beans fresh around here. I bet I have and just didn't pay attention.

Do ya'll have trouble putting meals together? I can come up with like an entree but never know what else to do other than green beans. I need lessons on meal planning.

It is hot and humid here in Florida but I'm craving Blazing Chili from Man in Mind. I sure love that chili, that and some Mammy's cornbread would hit the spot.

Ok what's cooking and what are ya'll up to? Come on spill the beans!!! emoticon
