SpamStuff, you are soo cute! And yes, I forgot to mention that pie has an excellent 'eye appeal' that just looks like the fluffiest, creamy cream pie. And the extracts. IMO are not over powering -they're just right!

I did something similar with a JoAnna cheesecake. This guy at my husband's work complained to everyone he was going to starve to death eating 'diet crap' his wife was making everyone eat as the wife put everyone on a diet. I sent in a piece of cheesecake, I think it was a chocolate one, which my husband proudly gave the diet stricken man the piece. As soon as the man got to work he gobbled it up, wanted the rest of the pie (sorry Charlie, one piece was all that I could spare. :) ) and got my phone number to give to his wife so she could make it and other recipes, but mainly to stop making that other crap. She never did call me, jealous, embarrased, or perhaps he heard we eat well every night? Now my husband does rub it in that we eat like that EVERY night with dessert like that EVERY night and the man could have relayed that to his wife. Now me, I'm curious enough that I would have made the call to find out what's the deal with the recipes, but that's just me.

My family's track record is they look forward to dinner and dessert so much they text me to learn what's on the menu every day. After months of answering text messages of' "what's for dinner?" I just send out a text message to both of them saying what's on the menu for the day. Now, my husband and son, let's say 'brag' (its a nicer term :) ) about what they get to have for their meal. Isn't there is just something about good food? I've learned its a powerful thing people want to have and hold on to. :D

Ha ha yeah! Only my mom lives about 100 feet away from us (we have a property that has two houses on it) so I took her over a slice today and she ate it rignt there on the spot, outside, wearing her farmer hat and work clothes, IN THE GREENHOUSE! ha ha! We both had to admit it didn't taste, in the least!!, diet. My son claims to hate coconut but HE liked it too. Big hit! I saved back a salisbury steak to take to my brother at work, and going to take two pieces of pie to work (one for my dad who is on a strict diet and one for my brother) tomorrow. I bet they lick the plates clean!

I'm soo glad you enjoyed the salisbury steak and cream pie as much as I did and you made it for company! There is something about that pie that makes it different than other cream pies and you're right, it doesn't taste calorie friendly!

Isn't it great to eat healthy, have our comfort food, and have dessert every night! This is what JoAnna did best and she shared it all with us.

Made both the Salisbury steak and Cream Pie last night, both were wild hits! Even my mom loves the pie and she is generally not overly fond of sugarfree/ff stuff.

as far as the HE archived message board, it doesn't exist anymore and its not just you who can't get in -no one can. even though the page is there to try to get in, it isn't really there and you'll get an error when you try. its sad -all those posts gone.

That's why I'm so grateful of this sparkteam. We can do what we can to have an HE community of our own.

thank Randella, I got the steak one to copy and paste but not the pie. My DH loves banana coconut pie. His favorite. I'm happy you put them in the recipes. Believe me I looked in all my cook books for them, the Ruth Bond site, two Wahoo sites and HE.

Seems to me H E site gets further and further in the dumper. All the recipes people have posted on the new site and no search engine. If there is one I sure can't find it. The recipe archives didn't work for me either and I logged in. Many of the new recipe threads have more than one recipe posted so you'd think you could do a search and find something.

I'm real proud of my self as I relearned a few days ago how to paste and copy. Maybe it's cut and paste --- what ever! I think I will leave out both extracts on the pie. You too, Heather?

Randella and all, Please post recipes for those of us who haven't been able to subscribe to the newsletters. I have several of JoAnna's books and was able for a while to get the newsletters, but things have changed somewhat. I love to collect and try recipes. The problem is I never know how much of anything I use when I am making something without a recipe, so I can't pass on the information.

I find most desserts are better the next day.

Ann, I think it would of been fine with lemon juice just not so much, there was 2 tablespoons of lemon juice AND two tablespoons of vinegar. I think 1 tablespoon of lemon juice would of gave that unique KFC zing, with out the weirdness. lol

I just looked in my Salad Recipe Box and my KFC cole slaw has lemon juice in it too. I haven't made it in a very long time.

This is my new favorite cole slaw dressing.

1 part f/f sour cream
2 parts f/f mayonnaise
1 tsp. cider vinegar
Splenda to taste.

I've used this with 1/2 a bag of cabbage slaw and come out with about 1/3 c. of dressing maybe a little more. I love to add 1/3 c. of craisins too.
Pretty quick and easy.

That peanut butter cole slaw sounds good. there's a waldorf salad that has peanut butter in it that we like too. peanut butter in salads sounds strange, but its quite good.

I just had a piece of that pie again and I should have rated it a 5. it was even better the next day and the bananas still held their color. one of the best cream pies I've made. I imagine it would be excellent for when the weather is really hot. its just so creamy and holds its shape too. not runny at all.

I wonder if too much lemon juice made something in it curdle slightly and gave it a grainy texture? I remember that happened to me too. at any rate, the deli coleslaw from HELP is my all time fave, so far, but I still do try the other coleslaw recipes. I found I don't care for the ones that have the celery seed. I prefer chopped or sliced celery instead.

Yeah goofy is for sure the word for it. The texture wasn't right either, but I could of lived with the texture (a bit grainy) if the flavor wasn't so weird. I just didn't care for it at all. I tried to eat it, and tried to like it, but nothing seemed to make me like it any better.

That pie sounds great!

And yes, can't go wrong with onion, garlic or bacon ever! lol

I didn't like the KFC coleslaw either. there was something goofy about it and now that you mention it, it prolly was too much lemon juice.

I have stacks of 'must try' notes that I haven't made a dent in. but I do search and try to make recipes that sound good like that Caribbean Banana Coconut Pie. I've always liked the little clip art next to the recipe. :-D

Tomorrow I'm going to try a 'fried' fish recipe from 9-08 (I think) its called Fishermans (something) Sorry, I'm not near my notes. I bought some rhubarb and strawberries I need to do something with soon too.

You're right Heather, those flavorings can jazz up a lot with hardly any calories, if any, to a plain can of veg.

Oh yes of course garlic too! And none of those ingredients really add much of any calories per a serving. (1 tablespoon of bacon bits is only like 25 calories, divided up between 2 or 3 people is really nothing). And onions and garlic freebies in my book! lol haha

I know what you mean Ann, that happens to me all the time, I open up a newsletter to look for a recipe and find a ton of others I should try! lol hahaha

I made the KFC cole slaw this week.....and well, I really didn't like it, it was from March 99. I think it had too much lemon juice, but just my opinion.

I use what JoAnna wrote in the July '97 issue, p.7 Q&A section on making your own cook and serve mix all the time. I go through a lot of corn starch because I prepare a lot of pies, but I save a lot of money by just buying more staple type ingredients. And, I'm not stuck with can't make the recipe by not having a box. :-)

I'm doing this homemade thing with making up the cream sauces and not buying so much creamed soups. Creamed soups are expensive and I used to buy a lot of them at one time.

I shall look those recipes up.

I've been loving through about 10 years of newsletters for crock pot recipes to try in my new 2 quart pot. Ones that have less ingred. or ones that I can easily half. As I look through the newsletters I see a lot of recipes I need to try.

I forget abot making my own pudding mix. It is getting harder and harder to find the cook and serve pudding with out paying a sky high price for it at a pricey grocery store. No Super WalMart here.

mmmm sounds good! I have to give it a try!

With a open can of green beans, I often quickly ad some frozen chopped onion and a tablespoon of bacon bits and fine it really adds a ton of flavor to just a plain old can of beans with out really any extra work.

I fixed a very good meal yesterday. I didn't think I put a whole lot of thought into it and sometimes the meals you just trust and try seem to be surprisingly awesome.

Baked Salisbury Steaks 2-98 p.12
Creamy Mushroom Rice Side Dish 2-03 p.6
Green beans (opened a can)
Caribbean Banana Coconut pie 2- 98 p.11

the pie was very, very good. It's filling is cooked and then poured over the bananas and coconut, chilled, then topped with a cool whip /rum topping. (I don't buy cook and serve pie mixes, I make mine like JoAnna wrote, 2 Tbsp corn starch, 1/2 to 3/4 cup Splenda.) Very creamy - very island inspired. I really liked the method of this pie and may do it on other pies instead of using instant pudding mix. a solid 4 stars.

The steaks binding mixture is with a flour /ketchup mixture -not bread crumbs like I would expect. I did use dry minced onions instead of chopping finely fresh onion. (took a short cut) These were moist, but held together firm like a good salisbury steak. Great classic flavor. 4-5 stars.

The rice was very creamy, and very tasty and not stuck together like I imagined the result might be. I combined all into a microwaveable bowl and zapped it 100% power for 12 minutes. It was an awesome side everyone ate and wanted seconds. 3-4 stars.
